Butcher's cafe, sweet lane, spice and kefi deli, really amazed. I have worked in spice for one month and it was much different than other restaurants I worked before in Nepal. In one month i learned alot and really changes my perception towards food and ingredients and what we can do, where we can reach, right now all I can say is sky is the limit for them especially subash. I did my internship from JW Marriott and worked in 2 fine dine restaurant and all I can say is, even they can't match up the level of fusion these guys do to food. They are elevating the normal local ingredients to maximum level in this small country. So grateful to them. Cheers to the team.

Firstly they cooked with extra virgin olive oil the onions,garlic but extra virgin olive oil goes bitter at 60 degrees,Evo is only used for salad dressing etc and he used a metal spoon to stir the risotto so this will break up all the granules of rice and the risotto at the end when U tap it should have the consistency like waves this one is way too thick

Yes, we can season with mustard oil but in this dish we are trying to keep authenticity of risotto and just wana give umami flavour of our buff sukuti . Sometime mustard oil can be too over powering . But we have more experimental dishes where we are using mustard oil . Stay tunned . Cheers

I would rather eat fully cooked meat out of desperation to avoid getting infected especially with tapeworms.....Those cysts are nasty....My friend still is under treatment due to neurocysticercosis.
