I think I heard one of the Chefs I watched (I don't remember who) that it is better to whisk it in the pan while cooking than whisk it before placing in the pan then whisk it while cooking because over whisking will make the eggs tough. Apparently, there is something about that.

First of all, let me tell you that this might be my favourite video on this channel. I loved the creativity of the recipes and was amazed by the level of your techniques. I will definitely try to copy Ben's quail for a special occasion, but I feel like the judges neglected the side dishes on James's plate. That marrow bone mashed potatoes would have killed me, sent me to heaven, brought me back to life and given me a a gentle hug before kissing me goodnight. I mean come on, it's not all about the protein !!! (And that comes from an avid carnivore)

i don't! I used to, but i saw a gordon ramsay video where he scrambled them inside the pot and that way they have more texture. The downside is that you have to work relatively fast, otherwise you'll get big chunks rather than small bits.

Guys!! Where to start... First off, so glad Ebbers vs Currie finally happened. What an awesome way to start the new show! So this is what happens when real chefs cook... quite a difference from the usual recipes you guys share with us! Both plates looked amazing but my vote goes to Ben. I loved all the ingredients he used and its a dish I would definitely order at a restaurant. Final thought, wee bit confused as to why Mike, the self proclaimed idiot that he is was allowed to teach us how to cook scrambled eggs. All in all, love the new show.
