Varan
Tur dal 1 cup
Ghee 1 tbsp
Water 2 cups
Turmeric pwd 2 tsp
Mustard seeds 1 tsp
Salt 1 tsp
Curry leaves 3-4 pcs
Jeera 1 tsp
Green chillies 3 nos.
Hing 1 tsp
Garlic cloves 2-3 nos
Tomato chopped 3 tbsp
Coriander chopped 1 tbsp
Jaggery 1 tbsp
Bharleli vangi
Ingredients:
Brinjals 5-6 pcs
Chopped onion ½ cup
Crushed peanuts ½ cup
Kanda-lasun masala ½ tbsp
Salt 1 tsp
Turmeric 1 tsp
Red chilli pwd 1 tsp
Garam masala ½ tsp
Coriander chopped 1 tbsp
Sugar a pinch
Peanut 2 tbsp
Water as required
Chicken tariwala
Oil 3 tbsp
Chicken 700 gms
Fresh coconut ¼ cup
Desiccated coconut 2 tbsp
Coriander seeds 1 tbsp
Black pepper ½ tbsp
Bay leaf 5-6 pcs
Star anise 1-2 pc
Cinnamon 1 inch
Green chilli 3-4 nos.
Garlic cloves 5-6 nos
Coriander handful
Onion chopped 1 cup
Ginger-garlic paste 2 tbsp
Turmeric pwd 1 tsp
Kanda- lasun masala 1 tbsp
Chicken masala ½ tbsp
Red chilli pwd 1 tsp
Coriander pwd ½ tbsp
Water as required
Salt as required
Masale bhaat
Rice 1 cup
Peanut oil 2 tbsp
Peanuts 2 tbsp
Dagad phool 1 tbsp
Star anise 2 nos
Coriander seeds 1 tbsp
Cinnamon ½ inch
Bay leaf 2-3 pcs
Black pepper 1 tsp
Cloves 2-3 pcs
Shahi jeera 1 tsp
Mustard seeds 1 tsp
Curry leaves 3-4 pcs
Green chillies 2-3 nos.

Daliya ½ cup
Ghee 1 tbsp
Sugar ¾ cup
Water 2 cup
Cashew nut 1 tbsp
Cardamom pwd a pinch
Bhakri
Rice flour 1 cup
Salt 1 tsp
Water 1 cup

Wow what a healthy Maharashtrian Thali... Maharashtrian flavours have a very aristocratic taste and they have ruled everyone like their Shourya rulers..... Very authentic style they had and that was carried forward... Bharleli Vangi 😋 yummy ,Varan 😋👍 too good, chicken 🐓 curry filled with flavours 👍, masala baath 😋😋😋 spicy 😋, bhakari 👍 and lastly the sweet 😋... All mouth watering colourful recipes... The names of dishes are right but I am sorry but the recipes are heavily flawed Authentic Names Inauthentic Recipes Didn't expect this from you given the fact you stay in Maharashtra and have restaurants here No offence but you can do better than this

Hello chef, we maharashtrian people never eat food like this thali mixing with veg and nonveg together . These are two different combinations. (Even for Lapsi we needed water 1 into 4 cup boiled water . Sometimes more based on lapsi quality).

Hello, sir , aapne itne pyar se Maharashtrian khana banaya, accha laga... 🙏🏼 Maharashtra me regions hai. Vidarbha Marathwada Paschim Maharashtra Khandesh Konkan . Sabki alag alag pahachan hai. Aur khana bhi thoda alag hota hai. Rice bhakar, specially Konkan me banayi jati hai. Bharli vangi (baigan) har region ka apna apna style hai.. Chicken me aapne jo Kanda lasun masala dala hai, vo Vidarbha me use nahi karte.. Masale bhat banane ka bhi sabka apana tarika hai, lekin hum aloo jarur dalte hai.. Marathwada , paschim Maharashtra me jyada tar jawar, bajra ki bhakar banate hai. Vidarbh me simple gehu ki roti, kabhi kabar jawar ki bhakri... Sabse common food item hai pooran poli jo apko pure Maharashtra me milega. Uska bhi sabka apna tarika hai. Vidarbh me pooran poli suger ke sath chhoti aur moti banayi jati hai, jo ghee k sath khate hai. Baki regions me gud ke sath usko patla aur bahut badi banate hai, jisko narial dudh, aam ras, aamti ke sath khate hai....

Ajay ji, Thanks fos showing such a lovely dishes. The only thing, Lapshi goes well with Jaggery and lapshi should be properly cooked before putting jaggery into it.

Maharashtra had 4 rigion kokan, vidharbha,marathvada,khandesh besikali nonveg disgesh femous in kokan n marathvada rigion sol kadhi kokan aur marathvada main parosi jati hai chaval ki roti kokan ke log use karte hai ragi ki roti khandesh jwar ki roti marathvada aur vidharbha ke log use karte hai Maharashtra ka chaval jo khandesh side main ugaya jata hai indrayani chaval usi se masale bhat banta hai Kokan main , see food Marathwada, kolhapuri chikan , Baker vadi , Khandesh , ragi ki roti mirchi chi bhaji Vidharbha , sambar vadi, patvadi rassa, jwar roti, Poha , masale bhat , misal , ukadi che modak are comon in maharashtra

We Maharashtrian make some other food items also - aaloo chi wadi, modak, thali peeth (morning snacks), kande pohe with fresh coconut, sabudana khichdi, upama, sweet puri with cucumber and jaggery, puran poli, dahi kari, ghavan (known as neer dosa in south India), naralachi wadi (which distributed in shani mandir shani shingnapur), watana bhaat (it is like peac pulav but not actually like pulav)

It was fine, but this was non-veg thali, veg thali consists of koshmbir, chutney, papad, kurdaya, panch amrut, sokhi bhaji, usal rasaa, urdache bondya, mattha, more sweets, though yours preparation was dawn good 👍 happy cooking

I was looking for this Brinjal curry. My Maharashtrian neighbour used to make it and share it with me. Since then Brinjal curry/bharith is my favourite dish. It's delicious taste is still lingering on my taste buds. Thanks a ton for this recipe Sir. God bless you abundantly. 🙏🙏🙏

It was great watching traditional Maharashtrian cuisine on your show. A very good initiative. Thank you. A suggestion: For any bhakri dough, whether jowar, bajra , nachani or rice, when the water starts boiling in the ganj, add a tbsp or two of oil or ghee to it along with salt. Put off gas Then add the flour, mix roughly with a wooden ladle, cover the ganj and let it rest for 5 minutes. Then take out the dough onto a paraat while it is still hot/warm enough for you to knead with your hands. The dough has to be kneaded fast & well, to avoid cracks. If it feels dry, sprinkle hot water while kneading. Cover the dough with a damp muslin cloth while you make the bhakri. Water should not be added to brinjal sabzi or vangi chi bhaji. It has to be cooked in oil only otherwise it will taste paanchat or flat. After the oil tadka, do not add the masalas. Just put the bharleli vangi in the oil, let it be coated with oil on all sides, cover & cook only in oil on a low flame till almost 80% done. Then add the masalas along with finely chopped tomatoes, mix well and cook on low flame. The tomatoes will provide the moisture and sourness and the dry masala will not burn. Dry dessicated coconut is essential in Maharashtrian cooking. You must add it to the masala.

It was definitely not a right way to cook chicken rassa...the watan and all the other masla should be roasted together properly till the oil separates.. you don't add it directly..one will definitely not get that kind of flavour it has to if made by this process...it's a wrong method...

I love all your thali recipes especially shaadi wala thali. Why don't you try karnataka style thali. I have not seen many chef's cooking any Karnataka dishes.

Being from Karnataka, I agree the point regarding not showing Karnataka thali but actually it has too much to offer based on the different areas of Karnataka and community. If you go to coastal side, they have the speciality in seafood and spicy dishes.Communities like Gowdas, Lingayats, Mangaloreans, Coorgis, Malenadu people,north Karnataka people etc have their own and distinct food dishes.

@@ChefAjayChopra I have several dishes as favourite..but mostly I like home cooked food like Gavarichi Sheng(with groundbut powder), Village style Vang-batata, Chicken/Mutton curry (Kala Rasa Anni tambda Rasa) all of these spicy dishes served with Bajara / Jowar bhakri.

Kanda lahsun masala is a blend of dried kashmiri red chilies, byadagi red chilies, bay leaf, cumin seeds, white sesame seeds, coriander seeds, black cumin seeds,sea Salt, desiccated dry coconut, peppercorn,black cardamom,cloves, star anise, asafoetida, onion garlic and ginger you can buy online.

Every thing was good chef, but in Maharashtra generally veg & non veg thalis are kept separate no body serves maslebhat, sweet & bharle vange with chicken.

Too good ...osm.... I like the way u cook ... Exactly like we cook at home .. simultaneously...not like. Other chefs.... Yet being a maharashtian... Want to share some suggestions.... 1) in a lapasi... We use jaggery ( compulsory ) instead of sugar .... Otherwise it becomes kheer 2 ) also thin coconut slices are added ...that tastes osm 3 )also this waran was too good ....there are many more varieties of waran... .. but u could add some grated coconut too ..

One like for Tandalachi bhakari... it's hard to make. Generally, in the mess or khanawal rice bhakari dough is made with cold water and really tastes bad. But you have shown the correct procedure for making it.
