अमृतसरी आलू वादियां घर पर बनाये आसानी से | amritsari aloo wadi ki sabji recipe | Chef Ajay Chopra
Aloo Ki Wadiyan Ingredients:
Oil 2 Tbsp
Ghee 2 Tbsp
Hing 1 tsp
Punjabi Wadi 2 Nos.
Potatoes 2 Nos.
Onion Paste ½ Cup
Ginger & Garlic Paste 2 Tbsp
Green Chillies 3-4pcs
Tomato Paste ½ Cup
Salt 1 Tbsp
Jeera 1 tbsp
Bayleaf 2-3 pcs
Kashmiri Chilly Powder 1 Tbsp
Turmeric Powder 1 Tbsp
Coriander Powder 1 Tbsp
Jeera Powder ½ Tbsp
Kasoori Methi 1 tbsp
Garam Masala Powder 1 Tsp
Chopped Coriander 2 Tbsp
Method:
 Break wadiyan into bite size pieces.
 Heat oil in a pan and shallow fry the wadiyan.
 Soak wadiyan into water.
 Grind onion, ginger, garlic, green chillies, tomato together to make a smooth paste.
 Heat oil in a cooker add grounded masala paste and cook till masala leaves oil.
 Add potato and wadiyan in the pan and mix thoroughly.
 Add salt, red chilly powder, turmeric powder, coriander powder and cook it nicely.
 Add hot water and cover the cooker lid.
 Allow to cook on medium flame for 2 whistles.
 Open the lid, finish the dish with garam masala and chopped coriander.

Thanks chef for sharing this recipe (आलू बड़िया). सेफ़ जब आप ये कहते हो ये तो मम्मी को पता होगा, वो ही बता पायेगीं । ये तो मम्मी की रेसिपी है। मुझे बहुत अच्छा लगता है। मुझे मेरी मम्मी के हाथ के बने खाने की याद आ जाती। वो आज हमारे बीच नहीं हैं। मैं उनको और उनके हाथ के बने खाने को बहुत मिस करता हूं। Love you mom ... always...... Maine apne jeevan mein jitni baar Aloo Wadi khaaye hain, sirf pure veg style mein hi khaaye hain. Lekin yeh pyaaz ke saath bani hui recipe itni swadisht lg rhi hai, ki ek baar iss vidhi se banana toh banta hai. Awesome recipe Chef!

Too too tasty a recipee . We bengalis prepare masala bari jhal with jeera hing sliced onions garlic tomatoes green chillies white+black mustard paste coriander leaves and of course diced boiled potatoes. I will try your recipee surely.

You are welcome. Do prepare my recipee. And add poppy seeds to the white mustard seeds and absolutely black mustard seeds in equal proortion in another recipee, we call it masala bari posto. Its eaten with parboiled boiled or steamed rice. Use mustard oil for both recipees. But not garam masala at all. Instead, spread raw mustard oil over the dish in the end.

Love this. Can this Wadi be used as a multi-purpose addition in diiferent dishes? Eg: can I add it to Kadhi instead of Pakoda? Can I add them to Dal tadka etc?

I loved ur style and way of cooking, but this time after I tried myself cooking vadi after roasting them in ghee...the end result result was that it got very much bitter, whole my efforts went into vain

If I am not wrong then In Mumbai it calls "Saandge" they are smaller in sizes but recipe is same. you should be able get them in good grocery stores.
