Why didn't you use the seasoned flour from dredging the pork chops in order to make your gravy?

Hello Chef Parisi, pork has to be one of my favorite meats. Love the recipe and that you explain the options we can follow if we do not have the proper ingredients. And yes, I always have bacon fat in my freezer to use in certain dishes when I cook. Thank You for sharing. Best Regards. 👍❤

How do you make cornmeal gravy?

@@myraprice3893 After I fry my pork chops I leave a tablespoons or two of the drippings in the pan and put a quarter cup to a full cup of cornmeal in the pan. You have to have enough oil to where the cornmeal and oil make a thin paste consistency. You can use a neutral oil if you don't have enough pan drippings. I brown the cornmeal until it is a dark brown. Once it reaches this point I add in a cup to two cups of canned evaporated milk whisking to prevent lumps, bring to a boil until it thickens. Salt and pepper to taste. Take it off the heat and add a tablespoon or two of unsalted butter. Spoon over pork chops. I serve with flaky biscuits 😋 😍

@@samanthawyatt6641 Thank you! Sounds like regular cream gravy like with chicken. I'm 78 years and never heard of gravy made with cornmeal! We will have to try it soon.

Chef Billy, I am a nurse, and it isn’t advisable to taste raw flour as it hasn’t been cooked and can contain bacteria that can cause food poisoning.

I love your videos! I'm from New Orleans & this makes me nostalgic for food from my childhood. I'm trying to teach myself to cook...and I get so frustrated bc I mess my food up alot trying to follow certain recipes. Love that you actually explain very thoroughly! Can you make shrimp b grits?

I believe cooking is art while baking is science...have fun when your cooking. I believe all recipes can and should be tweaked. When i would stress out trying to make the perfect dish, it usually turned out poorly. Even on things I had made a hundred times. I found the secret to cooking is to enjoy the process and don't stress. Like seriously Cooking With Love and not trying to be perfect made all the difference

4/21/24. I just made these per the recipe and they are unbelievable. I unfortunately had a little too much salt, but they were still bearable and delicious. I served with rice because my son doesn’t like mashed potatoes. I didn’t have any bacon fat so I added a little bit of butter which definitely made a difference Definitely, without a doubt, will be cooking this again. Thank you for another great recipe.

OMG this was fantastic! Made it tonight, my husband ate it so fast I had to stop him from taking seconds, so we can have it again, tomorrow night! Made mashed potatoes and green beans with toasted sliced almonds. Delish!
