Years ago, the most struggle of struggle meals I ever had to resort to was tossing a bunch of spices into boiling water with some dollar store pasta. It wasn't great, but it was hot and edible enough to chew and swallow without any of it fighting its way back up. It was also literally the only thing we had in the cupboard/pantry (the fridge was empty) and kept us going long enough to reach the next paycheck. You start appreciating food a whole lot more once you're forced to skip several meals just to be able to afford your bus fare. I haven't had to resort to a true struggle meal for many years but I never really forgot the experience and almost obsessively keep our pantry well stocked (just in case).

my favorite struggle meal is just the humble sweet potato, quick wash and scrub so you can eat the skin too, stab a few holes in it with a knife, microwave for like 5 minutes and sit down with your phone whilst it does, then just take it out, slice it open, add butter, pinch of salt and/or msg then whatever the hell you like, potato like rice is very versatile so just chuck whatever you can be bothered with on depending on what ingredients you have in and the level of how much you care, you can just wash, stab and mike it just have it plain and its still great. you can make it if you're broke, depressed, drunk or whatever, the ultimate struggle meals are the simplest, its cheap, easy and versatile. sweet potatos have got me through a lot of times where i was too broke, drunk, or depressed to do better.

Mix the dry ingredients with the water, then stir in the peanut butter. Oh, and crumble the cracker packet in. When it's gone in 3 minutes, pour in water, scrub around with your hand, and chug it. Wipe clean with your bandana. Good for the day.

When I was a kid I had a friend who lived with his single dad, they weren't poor but his father wasn't great and cooking and had a job that kept him from home most of the time, so their meals were always very simple when I visited. One that I remember, and have used myself, was a dish of white rice, served with pan-fried minced meat, seasoned with salt and black pepper and ketchup or any other bottle sauce that was available in the fridge. While the dish is rather boring and bland, it was a perfect struggle meal that helped me a lot during my late teens when I lived alone at my own apartment as a student with low income. It's cheap to make and due to it being bland, using ketchup, soy sauce or whatever else is at hand makes it diverse in quality and flavor. It's not something I would cook as a first choice today, but every once in a while if I need something quick and easy, it is still a handy dish to make.

There's a brand over here called "Jack's" (not Mr. Salmonella), that makes a decent frozen pizza. It's basically a tortilla replacing the crust of a pizza, and it has kind of a sweet sauce in it, a decent amount of cheese, but they skimp on the toppings. You need to add more halfway through, or you get about 6 slices of "pepperoni". For being a frozen pizza, I'd give it a 7.6/10. Pretty good if you just don't have the willpower to make anything homemade, or if you're not feeling too good.

Heat oil and cook the curry powder quickly in pan 2. Add onions and sausage and coat them, cook for six minutes 3. Add bell pepper and friggitello, let cook for another six minutes 4. Add water and fond, let cook for a few minutes 5. Add rice and peas 6. Add soy sauce (hence the name, it becomes a bowl of blackish brown rice) 7. Let absorb and cook for 3-4 minutes, stir at minute intervals to prevent burning Nothing fancy but atleast it tastes good and fills your stomach and is quite cheap :)

I once did something with fruit juice/crunchy cereal and liked it for a few bites then didn't like it so much, I decided to make my own, and better.. So here is the problem. Quantity of acidity/rate which the cereal turns to mush. The level of acidity makes it bad fairly quick. I once had the idea to use agar with fresh pomegranate juice (also did a watermelon separately) Serving a shallow bowl of soft jelly->crunchy cereal->more jelly-more cereal-little bit of jelly and cream. Now, this was rather nice. But way too much work for a simple breakfast or fast meal. I love pomegranate juice, and watermelon juice when it is made properly. (don't damage the watermelon seeds, don't let the pomegranate bruise/get contaminated with pith). In retrospect? Drink the fresh juice on the side, with toast or something. much easier for most of the enjoyment. (Juice is usually always better fresh. jelling agents, especially those like agar tend to slightly dull the flavors). James, If you consider this closer to a breakfast dessert, a little cream/whipped cream, fresh and sweet juice/jello, and some form of crunchy carb... topped with pomegranate pearls... It sounds a lot better than some orange juice and crackers, doesn't it?

I already told you before about my allergy to processed tomato products. I can eat fresh tomato or my father's homemade canned tomato with zero issues. We did silly things like take a thawed frozen pizza, scrape off the sauce, use the processed mozzarella and mix with real chedder and bake into bread sticks. We take the pizza crust and use my dad's mushroom sauce, more bagged mozzarella (budget and availability) and mix in some real Parmesan (not dry cheese dust), put the toppings back on add some additional toppings and spices whichever we had available that would work with whatever type the original toppings were.

Sweet pasta can actually be very tasty. I grew up with and still enjoy thicker pasta mixed with ground poppy seeds or ground walnuts, melted butter and sugar. Delicious! Also fake risotto. You can either use leftover rice and cooked meat (chicken, turkey, pork) or start with raw. If raw, seal the meat first. Then saute an onion, add garlic, crushed caraway seeds, add the rice and then the meat, lots of paprika, salt and pepper, add water and let it cook till rice is almost tender, then add a can of carrots and peas. Very easy and fast meal and filling too. As for the noodles, one of my favourite dishes was cook thicker noodles, mix with butter and jam (plum jam is ideal but use raspberry jam or anything that's not way too sweet and ground walnuts). Put into a buttered dish, sprinkle leftover ground walnuts all over the top, pour over it a mixture of milk, vanilla sugar and two egg yolks and few thin slices of butter and bake in the oven till the top is nice and golden. It's not haute cuisine but it's a great sweet dish. In fact, I think I'm going to do it again, miss it.

My favorite struggle meal is just ramen and eggs. Start your noodles boiling, and cook just until they’re starting to soften and separate. Add your eggs - I usually do two per ramen packet. Cook for two -three minutes. You want the eggs to be slightly underdone. Drain, and quickly stir the eggs into the noodles. The eggs coat the noodles as they finish cooking from the residual heat. A little bit of butter or a sprinkle of Parmesan is good, but not essential.

I was quickly introduced to what the guys called their 'power breakfast' Brew a pot of the strongest coffee you can make, remove the seasoning packet from the ramen and place the noodles in a bowl pouring that strong coffee over them. Wait for the noodles to absorb the coffee and eat. You now have slow-release caffeine as the noodles keep you caffeinated over the next several hours. While it didn't sound totally disqusting, I was never up for trying it, but then I wasn't the one working overnight coding for clients. I asked the guys to save me the unused seasoning packets and would have myself a nice cup of broth in the break room when I wanted something different than coffee. I'm open to alternative uses for ramen noodles but only if some thought and seasoning is put into the recipe

That's not how you use milo. If you want a depression meal that is really simple but I sometimes live on it. Brown off mince and onion. Add in a packet of chicken noodle soup (the low salt kind), stir, add water, boil to reduce the water content. Add in frozen corn, continue simmering until corn is cooked. Eat with corn chips. Also you can do a no struggle risotto in a slow cooker, it will take about two hours but it's so low effort that it's a god send.

Hi Chef James, way back in the pre-Cambrian era, 1990s I made a quesadilla for us and our Oaxacan friends and to save time I put one tortilla on the boddom and melted cheese etc on top then topped with another and flipped it over to fry on the other side. Our Doctor friend asked sarcastically "Que Madres es esa!" and I answered "Precisamente esa una Madriola" and from that time on we've named that concoction a Madriola....hahaha. Jacques Mexico

I make tortilla pizza even without financial struggles. I don't prebake the tortillas, just build the pizza and pop it in the oven till the cheese is melted (350 for about 10 minutes) it's a pretty tasty quick meal.

This is like a scientific experiment. Love it when weird combinations that actually are much better than it sounds are discovered. Of course, there will be a lot of vomit-inducing products along the way.

If Milo (or Ovaltine) and rice are the only food available, just eat the rice plain (maybe with a little sesame oil), then make the chocolate malt drink normally. You get to enjoy both without having them ruin each other 🤣 Another way is to put the water in rice too, somehow I really like that texture (not porridge, literally cooked rice with water)

These experiments remind me of my college life, where sometimes It was necessary to create cheap lunch or dinner from various leftover ingredients due to financial reasons. 😅

Good morning from Portland, Oregon. I can't believe he actually tried all of these things. Half of them looked so bad they made me sick just looking at them.

Grew up in the Philippines, and had Milo on rice (our Milo here is sweetened a bit more compared to overseas Milo - I prefer Ovaltine more as it is more sweet than Milo lol), and we also had coffee with creamer (piping hot) poured over rice as well. Or just plain unfiltered fish sauce drizzled over hot rice which is something I still eat to this day. :D

Cereals with juice instead of milk is a prettty common thing in many countries James. Altho the mainstream eats them with milk. With the right type of cereals or oats (I like oats with nuts and berries and chocolate flakes) it's actually decent. But I still prefer milk or yoghurt with my cereal.
