I remember watching you on TV over a decade ago, you were teaching people how to peel and dice tomatoes . boiling water, 15 seconds right in to an ice bath. you have always been an incredible chef, your TV presence is and always has been amazing. easy to follow instructions, great personality and your techniques are proven time and time again. you sir are my favorite chef. I have learned so much from watching you over the years. I really appreciate you and your teachings . anyone can become a better cook simply by watching you and getting the basics of cooking down to a TEE. My Friend! So delicious. This is one of my “special” breakfasts as well. The eggs Benedict recipe you shared (delicious) is my wife’s favorite, but steak and eggs is MY favorite. You and I have the same cooking style…take time with the bacon, take time with the onion, put the potatoes in and again, take your time. BUT, when the egg starts cooking, you have 3 things going, so you are constantly in motion! Love it! For me, that’s one of the fun parts of cooking. Paying attention near the end is the difference between an awesome dish, and one that’s just ok. Thank you my friend!

Today is our wedding anniversary. While I was watering our tomatoes and flowers my husband snuck off to the most wonderful store, Oliver's, and got steaks flowers, champagne, oranges and petits fours. When I came in, the flowers with a beautiful card and petits fours were at my place at the table with champagne chilling. And now, he is making your steak and eggs. I can't eat potatoes so we are substituting rutabaga. Yum! I can't wait! My husband, Paul, is a fantastic cook and we love to watch Jean Pierre. I grow a lot of onions, then in the fall and winter I slice and caramelize them, put them on covered trays in my freezer and then freeze dry them!! Amazing.... and they taste just like Funyun chips but they are preserved and you can crush them and sprinkle them on dishes or steaks, lay them on top of hamburgers during the last stages of cooking to absorb the moisture from the meat and they rehydrate and taste amazing. I just ordered me one of those non-stick Woll pans with a lid.

Only changes I would make is the egg over easy (I just like my fried eggs like that). And right before serving I would add diced tomato, and shredded sharp cheddar to the potatoes. YUM!!! For me too much work in the morning, but THE PERFECT breakfast for dinner meal!

Oh my God! This brings back some memories of the time when I lived in Park Slope, Brooklyn NY back in the early 90’s. Park Slope was a mostly Irish, Italian and Polish neighborhood. We had a 24 hour Diner on 7th Ave and 13th street which was owned by Frankie and his brother. They used to make Steak like that and I would go there at 2am for either a late night dinner or early breakfast and watch Frankie fall asleep or better nodding off behind the cash register! You are such a joy to watch, Chef. It makes me happy even in some darker times in the world. The Chinese American kids I feed eat it all up when they come, 18-20, so I have to adjust the recipe. Sometimes I feel emotional a little t see the happiness on their faces. :) You are a true treasure to the world. My skills have improved greatly only thanks to you. I Make Chinese food for them (real) since I lived in China so long. Lobsters and crabs are like gold to them. Manila clams and shrimp. No deep frying of anything, which most people like in these parts. No way I will do that. Thanks so much for your great teaching. They ask, "How do you know how to do this?" I always joke "McDonald's." The Western people that come like Western food. The eastern people that come like eastern food. I have completed Culinary school not, but it was easier because I watched and made all your videos. But the children like both. Keeps them out of fast food junk restaurants. I will now have to work 6 months as an intern in a fancy restaurant here in Dallas. I won't make any money, but I am retired at 50.
