I am an alumni of the Culinary Institute of America, class of 1971, when it was in New Haven CT, I have cooked in 23 different restaurants over a 30 yr cooking span, going from McDonald's to Catering Companys, to 3 Sheraton Hotels, to Head Chef of the San Diego Play Boy Club, and thought I knew all the tricks, but I lean something new every time I watch one of your videos, wish you were one the Chef instructors I back at the Institute would have saved me a lot of time learning in the field, so thank you for all the new tips, a little late but not your fault! Funny story my Dad lived over Pepes pizza on Wooster St in 1925, while he was playing one day with a slab of ice slipped on it and cut his head open Pepe picked him up and brought him to the hospital to get stitches on his forehead, and he carried that small scar on his forehead, the rest of his life along with a great story.

I learned to cook while watching Julia Child, Graham Kerr, and Emeril Lagasse. All of them talked constantly. If the teacher doesn't talk, how are they going to tell what to do, and more important, what not to do. Listen to the man. He knows what he is doing, and he is telling you what he knows.

I LOVE the talking and your words, I actually watch your youtubes mostly because you are happy and fun and make me laugh, and brighten my day. I watch for these reasons more than for the cooking (but the cooking is very good too and I've learned lots of tips and tricks). I especially love it cuz the older I get the more I use the wrong words and mix them up. And my only language is English! Keep it up Chef!

Chef, the passion in your voice is why we like it when you talk. It adds meaning and memory. And you explain even more things. You have a wonderful sense of humor and are humble, and Jack the Cameraman adds funny little notes when you make up a new word! The way you teach and show us things is why we like you. We love hearing stories about your mother and father. How mom would scold you for putting black pepper in a white sauce. Never mind those "des gens ridicules," people who complain. You should reply, "Hey you! Start your show if you think millions don't love this channel and me!" You are the best teacher. I have made some of your dishes, made them again and improve, and keep working at it.

You keep it real by making your techniques relatable, and you impart sage culinary advice in conjunction with excellent tips. I hope you never change! Anyone who has the classless audacity to tell you how to run your channel should absolutely ‘Foxtrot Oscar' and find something else to watch! Like you I abhor disorganised unclean working environments, I’m always wiping up, rinsing and wiping my hands between washing them while working in the kitchen. I'm certain it probably comes from my years as working in cardiac surgery as a scrub (instrument) nurse, methodical and fast paced, always having to think three steps ahead with a LOT of equipment and instrumentation. Thank you for everything you do, you’ve given me tremendous confidence to gives these various dishes a go, and thanks to your invaluable tips, they’ve been a magnificent success. Well guess what I am serving my guests this weekend! I think I will make them a little smaller as appetizers. Yes, I am cutting PVC pipes as we speak. Chef JP and Jacque, I forgot to tell you that for the holidays I made up small boxes as presents for the holidays. They included clarified butter, cooked roux (with instructions), frozen garlic puree, homemade butter with herbs ( 2 kinds), homemade marinara, and a recipe that I knew each box should have....and your KZbin address. Love Chef Jean Pierre videos! So many wonderful recipes and cooking techniques, step by step and always even giving options as you go! You don’t have coconut.. don’t skip on making the recipe, just make it without coconut! A child could do this ~ one of my favorite sayings of his! Along with so many more, especially the Butter comments! If you weren’t talking, the videos would be nothing much better than those tic toc ones! Lol. These are by far the best cooking videos!
