Fast becoming a fan and an avid watcher since a lot of your vlogs and collaborations with Ninong Ry and Mountain Man helped me to discover the appreciation of the process and creativity of cooking. This video made me realize how rich we are in both tradition and land resources seeing as I have just watched a variety of traditional ingredients and cooking techniques I rarely get to see in my place. Making etag is indeed an art, different municipalities in the cordillera have a different way of doing it. Not only for pig but for other animals as well. Some households actually use different types of wood (for smoking) para mabango and fruity. You can actually do it here in Manila (sun drying method) basta ilabas lang yung pork pag tirik na ang araw at isilong sa gabi. Hope you had the opportunity to take some of the black rice home, chef.
