TURAI/ RIDGE GOURD SABJI | तुरई की मसलेदार सब्ज़ी - You've probably used turai more as a loofah than a sabji!! But trust me, once you try this recipe, you will never look at Turai the same way again :)

TURAI KI SABJI
Preparation time : 10 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
2-3 tbsp Ghee (घी)
1 tsp Cumin Seeds (जीरा)
½ tsp Fennel Seeds (सौंफ)
¼ tsp Asafoetida (हींग)
3-4 Garlic - chopped (लेसन)
1 inch Ginger - chopped (अदरक)
3 fresh Green Chillies - chopped (हरी मिर्च)
2 medium Onion - sliced (प्याज़)
Salt to taste (नमक स्वादानुसार)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 tsp Coriander Powder (धनिया पाउडर)
3 Ridge Gourd (Turai) - sliced (तुरई)
Water (पानी)
2 medium Tomatoes - chopped (टमाटर)
3 tbsp Coriander Leaves - chopped (धनिया पत्ता)
For Garnish
fresh Coriander Leaves (धनिया पत्ता)
Process
In a kadai heat ghee and add cumin seeds, fennel seeds, asafoetida, ginger, garlic, green chillies and saute for a few seconds.
Now add onion saute until light brown then add salt, turmeric powder, degi red chilli powder, coriander powder and saute them until fragrant.
Then add the ridge gourd (turai) and saute it for a minute now add some water then cover and cook for 6-8 minutes.
Remove the lid and stir it once then add the tomatoes and cook for another minute.
Now finally add coriander leaves and give it a final mix.
Serve hot in a serving bowl and garnish with coriander leaves

In Maharashtra, the hard skinned is called Shirala/Dodke, while the soft skinned (which is not common in markets) is called Gilke.

We substituted ghee with mustard oil (personal preference) & it turned out to be really tasty... 😋 Even though we skipped ginger, saunf & coriander leaves (ran out of them)😓

It is not chichinga.. it is jhinge/ jhinga. We cook alu-jhinge posto with it .

Nope it's not chichinge... Which Chef Ranveer was peeling and cooking is our Jhinge (not confuse with Jhinga/Prawns) ... Ridge gourd in English. What he was talking about is called Sponge gourd...aka Loofa /Hoopa in bengali. What you are talking about is called Snake gourd (Chichinga)... Commonly cooked with prawns.

We in Maharashtra make the dry chutney of the left over peals of ridge gourd. It has dry coconut, load of green dhania, teel, crushed roasted peanuts, curry leaves, cumin, amchur powder, sugar and chili or chili powder. It's a travel accompaniment with roti, curd rice.. I would like to share my recipe pics which I learnt from you. Loved this. Wud really appreciate if u make lauki, tinda, parwal (not tendli) gawaar, drumsticks, karela etc too I mean not the usual stuff but the seasonal sabzis and also not the usual dals, legumes but the uncommon ones. If u give us tasty recipe of the same then they will become a part of our everyday menu. Like the jimikand receipe u showed..

Awesome recipe for turai. We make every week at our house in mustard sauce. You mentioned using daler bori, made me nostalgic. Its such a elegant recipe and can customise according to your taste.. do also mention in detail about the milk and turai. Never had it. Thank you chef. I love the way you describe your ingredients

Ranveer we grate or remove peel n chop. Oil rai jeera green chillies hung haldi til n salt add peel n lid. Now add Lil sugar n corriander leaves chopped. Chutney is ready. We do not keep garam masala, hing n salt in masala box as it mixes flavor. Salt reacts with metal too.

I buy very fresh Turai three,four times in Canada. All the times One Turai test wise not good.Thanks to my Dad he taught me that when you make this vegetable cut little peace, test and then make it. Thanks chef I learned new recipe from you.

When i first came to France for my higher studies, i didn't even have the idea how long i should boil an egg!! I made this dish and it's awesome 👍. I like my veggies to have a crisp bite, but getting that out of gourds is tough as they have a lot of water in them. I was worried, but after trying this recipe i am a fan. Plus the guy gives so many other options while cooking that it feels like a bro talking to us and sharing his cooking wisdom ❤❤❤

Instead of peeling off the skin... Grate it. Grate dry coconut. Chop some green chillies. Add some til. Roast everything till turai skin becomes black n crunchy.... In maharashtra we make this crunchy chutni instead of thecha. It tastes soooo good that we eat it just like that.

तरोई ऐसी सब्जी है जिसको आप बहुत ही कम मसालों में भी बेहतरीन बना सकते है, बस जीरा, तरोई, टमाटर, हींग,नमक, तेल और सब्जी या मैगी मसाला मुख्य खेल है पकाने में 1 किलो में मेरी लगभग 300 ग्राम सब्जी तैयार होगी लेकिन खाने में बेहतरीन होगी...
