KALAKAND
Preparation time : 10 minutes
Cooking time : 40-45 minutes
Servings : 4
Ingredients
500 ml Milk (दूध)
400 gm Paneer - grated (पनीर)
1 tsp Ghee (घी)
10-12 Cashew Nuts - chopped (काजू)
8-10 Almonds - chopped (बदाम)
6-8 Pistachio - chopped (पिस्ता)
200 ml Condensed Milk (कन्डेंस्ड मिल्क)
1 tsp Cardamom Powder (इलायची पाउडर)
a few Saffron Strands (केसर)
a pinch Salt (नमक)
½ tsp Ghee for greasing (घी)
Process
In a kadai add milk, paneer and stir until the milk is evaporated.
Now add ghee, cashew nuts, almonds, pistachio and roast them for 2 minutes.
Then add the condensed milk, cardamom powder, saffron and continue cooking until the mixture thickens.
Finish with a pinch of salt and mix everything properly then switch off the flames.
Grease a tray with ghee and spread the mixture in it and keep in the fridge for 30-40 minutes to set properly.
Remove and cut it into your desired shape and serve.

Making this recipe for 3 years on every Diwali now. Skipping condensed milk for about 100gm sugar and boiling a litre of milk instead of 500ml. Worls great, thanks for this recipe.

I tried this recipe , I am in UK and I can not get quality paneer and condensed milk and getting them organic is very difficult. So I chose to make everything from scratch and also to avoid processed ready made ingredients . Making from scratch also made it easy except patience ,but it was the perfect birthday Mithai for my husband who prefers desi things than Cakes , loved it so much. It was irresistible and we finished so quickly almost half a kilo of that , :) and definitely put on some weight. I love the way you explain the theory behind everything.I love to cook and I find it very much resonating with you ,the way you add the traditional elements at whatever costs ... we Love you chef..be safe during covid !

So I just want to say that he in all his numerous videos, he never ceases to amaze me. Always has a trick up his sleeve. Always has a way to do the unexpected. Always has a different approach to classic recipes. His are the only recipes on KZbin that have never failed. Has been an inspiration for me to take up cooking as a hobby.(ie. obviously alongside from my mother 😁)

I made this recipe of kalakand yesterday on diwali day with freshly home made paneer ...I must tell you its yummy...and your trick of adding lemon zest...I used lemone to curdle paneer from milk....and that lemony taste got added and it turned out to be yummy with tinge of sourness.... Instead of ‘Rocket science’ we should use ‘ Cooking science’.. So intricate, deep and amusing.. and Mr RB has achieved spiritual level knowledge in it..

Heyy chef B, I tried making this however when I added the paneer(albeit it was a 3 day old one, would have this caused the problem??) to the milk, instead of evaporating it spilt more. So I cooked it further, end result being a sweet spongy paneer.

Did you add condensed milk to it? I think that will help giving it a better bind and texture than sugar.
