Always prefer ur recipes over other chefs for multiple reasons... I would like to correct you for this recipes though, The one u made is khaman and ONLY KHAMAN with family (tamtam and khamani) but not DHOKLA...when I migrate from Gujarat, I notice non Gujaratis naming this recipes as khaman dhokala as if first and last name.. Though both are totally different recipes... Khaman is made from only besan, the one u made BUT Dhokla is made from Handava floor (1 part rice, 1/3 part toor Daal and 1/4 part Chana daal and grind together to make coarse flour) as a base... Good KHAMAN recipe though.. would recommend to change name though..

Hello chef , I inspired your cooking and I don’t like to criticize because I know ability but this Khaman recipe is so much far from what we Gujarati cook in our home. Specially khamni is not how we make traditionally. One tip for beginners is that always let cook down your khaman and then add tadka if you add tadka while Khaman is too hot , your Khaman become too oily.

हमारे काठियावाड़ में ढोकला .. चनादाल,उड़द दाल रवा,मक्की,चावल,जवार के आटे को छास के साथ में farment करके , हरे लसन,मिर्ची के पेस्ट डालकर स्टीम किया जाता है ,,,और क्या खूब बनता है वो ढोकला 🤤

I usually like the recipes you make but today I am disappointed.. being a gujarati, I can tell you that this is nothing like nylon khaman (dont call it dhokla, it is khaman completely different from dhokla) Tam tam khaman is not what you shared here.. you just made vagharela khaman which is yet another style of khaman but not tam tam khaman. Consistency of the nylon khaman is the key.. they look dry in the video where as real authentic khaman as spongy and juicy.

3:19 Nooo, pls dont!! Khaman are of two types 1. Surati khaman- which are spicy and 2. Nylon khaman- which are sweet and Dhokla is another dish jisme khatash hoti hai!!

Areey Dhokla n Khaman they both are different thing. Many times people get confused. The real Dhokla are white made out of rice and Urad daal, it's Idli's gujju cousin. While traditional Khaman is made out of chanadaal, uraddal n chora( black eye beans) daal's furmanted mixture. The khamni is made out of the traditional Khaman. Chef Ranbeer hasreally shown the shortcut otherwise it's long procedure to make traditional Khaman n khamni. There is another variety,it's calledSurti lovho which is made out of Khaman batter and it's not cut,directly whole Khaman plate is removed, mashed and served with oil n chutney. My region Surat is known for all three.

He told the reason ... adding the eno at right time and also mixing it for right duration of time... neither less nor more Also this is khaman dhokla , may be u have eaten the original dhokla which is made up of chanal daal and more ingredients

हर चीज की क्वांटिटी बताया करें भाई जी। पानी और नमक की भी। मुझे आपके टेस्ट पे पूरा भरोसा है। स्वादानुसार लिख के कंफ्यूज न करें। आज ढोकला बनाया , तिलांडे पे चला गया। पानी तो बता भाई कितना डालना है। मजबूरी में खमनी बनानी पड़ी।

Chef when you prepared showed 3 variation, I remembered how I trick my kids to make them eat. I browsed many times to prepare dhokla but never dared I will try it chef

In Gujarat Khaman and Dhokla are two totally different things. Look it up :)

What's the difference? My Gujerati friends say khaman/khaman dhokla/dhokla. 🤷‍♀️

Hi...I am from gujarat....khaman is made from besan or ground bhigoi hui daal and dhokla is made from a mix of 2 types of daal and broken rice or kanki....this flour is also known as kanki kormu in gujarat...we have it mostly every day... Any ways...mostly out of gujarat people call khaman as khaman dhokla...but the two dishes are different....

I always failed in cooking perfect dhokla....made this today fully following the proportion given by you and the process...and it turned out to be better than market ones....thanks...you make cooking easy and interesting...
