AAMRAS & SHRIKHAND PURI
Preparation time 15-20 minutes
Cooking time 10-15 minutes
Serve 2
Ingredients
For Dough
2 cups Whole wheat flour
¼ cup Semolina
Salt to taste
1 tbsp Oil
Water as required
1 tsp Oil
Oil for frying
For Aamras
2 large size Alphonso mangoes, cut into cube
⅓ cup Caster sugar
For Shrikhand
600 gms Hung curd
⅓ cup Caster sugar
1 cup Prepared Amras
6-7 Saffron strands
¼ cup Alphonso mangoes, cut into cube
For Garnish
Alphonso mangoes, cut into cube
Saffron strands
Pistachios, blanched, sliver
Mint sprig
Process
For Dough
In a parat or a bowl add wheat flour, semolina powder, salt to taste, oil and water.
Knead it into smooth tight dough. Cover it with a muslin cloth and keep it aside for further use.
For Aamras
In a bowl, add mangoes and caster sugar.
Now, with the help of a hand blender, blend this mixture until smooth in texture.
For Mango Shrikhand
In a bowl or earthen pot, add hung curd and with the help of a whisk or spoon, whisk it nicely until smooth in texture.
Now, add caster sugar, prepared aamras, saffron strands, mangoes and mix it well.
Garnish it with mango cubes and almonds.
For Poori
Pinch a small lemon size ball and roll it into a round shape to slightly thick.
Heat oil in a kadai, once the oil is medium hot fry the puri
Press until the puri puffs up and splash oil to puff up fully.
Flip over and fry until it turns golden brown.
Remove on an absorbent paper.
Serve hot with prepared Aamras and mango shrikhand.

LOVED the Amrakhand recipe chef!! I am maharashtrian and Amrakhand-puri and amras-puri are in top 5 favorites in marathi households. For Aamras, we don't blend mangoes with blender, but mash them with hands so that they retain their lumpy texture which is very essential. Along with sugar, we also add milk OR ghee in it and then it becomes aamras....my 2 cents.

Can we just take a moment to appreciate how comfortable he is using his hands to mix things on camera? I have seen so many chefs who use a spoon for the initial mixing and then just skip the whole process and directly show the final product of mixing. (They might be skipping due to time constraints and that's okay, just pointing out a difference i saw.) I don't know if somebody mentioned this already in his previous videos. I started watching his videos just recently, and within a couple of videos i became his fan. And i love the way he is so interactive. I never saw a person who has so much knowledge about the global history of the ingredients he uses. It shows that he really loves what he is doing. Keep it up!! 👍👍

I'm from Kachchh..jahan Kesar Keri famous hai.. I'm hard core lover of Mango..Aam ke saath double layer roti bahut majedar lagti hai.. Gujarati me 'be padd wadi rotli' kehte hain.. mango season me main rice bhi aamras ke saath khati hu..kabhi khakar dekhna bahut tasty lagta hai.. By the way..atta gundhte waqt sar hilane wala style jabardast hai..

Aamras goes well with PuranPoli (Holige). This is a famous dish in Maharashtra and Karnataka 😛

It’s called Rasayan… made of Aamras jaggery and sometimes they put little elaichi powder also… quite nice. I personally have eaten this Aamras only from Raspuri variety of mangoes available in Bangalore

We have our own mango tree in bhavnagar,gujarat. My mom daily makes this aam ras puri. You have to try it. Today when i show this video to my mom he was like you're teaching me? And like always we were waiting for your "ranveer ne bataya nahi" 🤣🤣🤣🤣

Sir, its great to see our household recipe from you. We add a bit of sunth (dry ginger) powder and pinch of black pepper powder... it enhances the taste as well as makes aamras easy to digest.. do try🙂

A little trick from Maharashtra, add a 1/4 tsp of coarse black pepper powder and a pinch of salt to the Aamras. And DO NOT FORGET your param mitra ‘Ghyo’. It will elevate the dish to a ‘legendary’ state. @ChefRanveer

Hi,we in Konkan region make a spicy curry with baby mangoes ( fibrous tiny mangoes joh chusk chusk kaar khatai hai)..thus,these mangoes r treated more like a vegetable rather than a fruit...it would be great if u can showcase the Konkan recipe ' Ambe Upkari'..unfortunately I don't know what those tiny firm mangoes r called in English...we just tell the veggie vendor, upkari ka aam.the 'monopoly ' of this recipe is that the mangoes r kept whole,ie we don't cut it..whole baby mangoes floating in a spicy sour gravy

Small mango is available as "sugar baby" in Bangalore. We use those to make ambe upkari.

Gujaratis also make something called ‘gotla nu shak’ which literally translates as Gutli ki curry / gravy . Similar concept. Methi seeds go in it apart from mustard seeds , mirch ho powder and many other things. We use desi local fibrous mangoes which don’t go by any branded names like Alphonso or kesar but it’s solely a local variant. The Pulpy chusi hui guthliyaan are dipped again and again in Rassa ( pulpy gravy )… it is yum!!!! My mom makes it really well!!

Great Recipie. I have enjoyed it since last 3 decades. One suggestion though : Best aamras is made using hands and not blender. Fine puree is not expected but small lumps gives more texture to Aamras. Keep it up sir, you are the best. Congratulations on 5 millions.

After watching this video, I came to realise that I have been eating aamras since my childhood. We just didn't have a name for this. In my family we just call it aam chotkano (mashed mango). Even if I am from Kolkata, this is a very typical summer-y food from bangladesh (my grandfather was from Khulna). I like to have it with crispy toast. Breakfast lunch dinner - toast and aam chotkano - I can have it at anytime of the day.

Aam Rus and roti was our most frequent menu during summer time. We had 8 different type of mango trees and our fav was Alfonso mango with roti

Sir first of all congrats on reaching a mile stone of 50 lakh followers, this is just the beginning there will be more. Secondly chef I had earlier mentioned that kindly also take up regional recipes and show them to us like parsi dishes, Gian dishes south Indian dishes and so on. There is a vast world out there to explore and sir we r with you. Afonso de Albuquerque was the second governor of the Portuguese India and is known as founder of Portuguese colonial empire in India. He attacked Goa in 1510. The ruler of Goa was the Sultan of Bijapur Ismail Adil Shah. Afonso de Albuquerque is known to have started the first Portuguese Mint in the east. The Portuguese, when established themselves in Goa, started marrying the local ladies and thus from the times of Albuquerque, mixed marriages started in Goa, combining the culture of the east with west. Albuquerque is also known to have abolished the practice of Sati in Goa.

Another thing that goes super with Aam ras is fried chapati We cook chapati normally with or without ghee and then after a day (so that it gets dried up well) we deep fry it. Simple

मराठी घरोंमें पहले आमरस पीठपोळी के साथ खाते थे. चपाती के आटे में मोदक के लिए बनायी गई चावल की उकड भरके पुरणपोळि जैसे ही बेलकर तवेपर सेंकते है. इस पिठपोळीके साथ आमरस बहोतही स्वादिष्ट लगता है.
