Sage leaves is very essential in a lot of Italian cuisine. Without sage, the taste would be off. And Basil is from the mint family so it would give off a very strong sweet smell, similar to star anise. It will actually alter the taste of the dish when added.

@Badge Man Pasta isn't equal to noodles. One is made from rice, the other is made from wheat. Also most Oriental "pasta" is made with egg whites, or no eggs. Like, glass noodles.

My wife's from Italy and her grandma basically lived in the kitchen. One day she asked me to help her make sauce and that was the beginning of a years-long apprenticeship learning how to cook Italian food. The day she told me that my sauce was as good as hers was the day I knew I'd made it as a cook. Italian grandmas are the real OG's when it comes to teaching you how to cook properly. They can tell you more with a single look than Ramsay can with five paragraphs.

Understandable. If I ever say that something is just like my mother's cooking, it's definitely an insult. She never learned advanced techniques just as draining excess grease after browning hamburger, making sure to remove all of the eggshell when peeling hard boiled eggs, etc.

Idk, when there's professional judging going on, I'd root for the person who gets more technical criticism. When they give you vague compliments, it means they don't know how to process whatever you've got to their taste. The one with the criticism gets the point because it has its basis on something the chef could identify with, classically. Atleast, that's how we'd see it during art critique...
