Got to say again, the best videos on chinese restaurant recipes , I've been interested in chinese restaurant cooking since being a kid in the 70s, only Time we had a chinese take away, was on a special accasion, not like now when you can't be bothered to cook anything for tea, anyway these are the top recipes on the Internet, believe me I've been looking since the 1970s

Wow, thank you!Mark appreciate that..I was exactly like yourself .All my life since i had my first curry back in 1972,to be exact it was all i could think about,how to make them..It's took me a decade later to find out..I decided to take the plunge and went out and bought a burner,got myself a job in a Chinese and the rest is history..It was the only way i could find out and now i'm passing all this on to others..I wish i had met someone like myself many years previous and put me out my misery lol..Cheers Mark..

Thanks Harry i don't buy expensive stuff but takeaways will use Jasmine..There are hundreds of rice available..It's not like supermarkets when a few are only available.Asian supermarkets are different..I always made the rice when i worked in the Indians as a chef and used basmati so i generally use that..I'm not too clever when it comes to steamed rice and ends up a mess..When it comes to basmati i'm an expert.Cheers Harry.

🤣Thanks Alan..The burner is a gimmick and think that's what attracts a lot of people..I don't think my channel would be the same with me just cooking on a normal gas hob..The majority now get the idea and just adapt on a normal hob with some incredible results ..This is just my preference..

Aww thanks Richard,i think it's just a regional thing with peas in the same way with curries.In Glasgow they don't use them, well i've never seen them if they do.The sky's the limit when making fried rice dishes Richard,there are so many things you can add.Take care pal.

Hi Alex Watch your videos most days, I must say I have tried a lot of your recipes and have not been disappointed, when you stir fry I noticed nothing seems to stick to your wok, how do you clean it after cooking a recipe? Hi Harry how we doin pal..Food will always stick if the gas is too high and also not enough fluid in the wok in the form of water or oil..Normally the rule of thumb is to cook on a high heat but not always true..Obviously you don't want soggy food.My set up is different from your own i'm assuming but all the same rules apply if cooking on a normal hob..Always have a bowl of water to hand if things start to stick add a few splashes of water.You can also add oil but you could end up with dish being too oily so water is your best bet as this will evaporate oil wont..It's a common fault with most people.Again if starts to stick just turn the gas down and add your water it's that easy..The worst culprits are noodles and rice they always tend to stick but if you try some of the things i've mentioned they will never stick again..It;s trial and error Harry..Let me know how you get on..Cheers pal..

Thanks again Kevin appreciate that.. The origins for the five spice comes from my salt and chilli dishes. Comprising of pepper garlic and the five spice..It works great in this dish..We actually sell salt and chilli fried rice in the shop..This dish is basically similar in a sense..It's there in the background but makes a huge difference Chinese five spice plays a big part in Chinese cooking but it's knowing when to use it..It's overpowering so not much is needed.. Thanks Scott..The ham they use is from Asian cash and carry's..It's not something you would find in Morrisons..It's comes in 5 kilo tins,there's just no way you buy something like that also it's too expensive..The only solution is just to buy a tin of normal cooked ham from the supermarket..I've seen it loads of times when i'm in at my local Asians but there's no way i would buy it.Chicken ham fried rice has to be my favourite..What i'll do is hopefully make it tomorrow to try and give you an idea using supermarket tinned ham..It might help a bit..Cheers Scott..

That's the reason i haven't done one Barry..I've kinda stuck to the UK stuff..General TSO is not on any if the menus in the UK and as you said an American dish..I think Barry everyone is spoiled for choice as far as general Tso recipes go..So many to choose for online..I tend to stick to what i know and what i'm good at..I'm not sure why it's never travelled to these parts because it is a super tasty dish but UK takeaway's still don't sell it..There might be some but not many..Cheers Barry..

Thanks mate,believe it or not i don't eat any of it..I give it all away to family and friends etc..All my dishes are packed up and ready to go..Can't remember the last time i had a Chinese or even ordered one..I'm a fish supper man to be honest but for the better part of my life i was always intrigued on how it was all made..It's like working in a cake shop after a while you get fed up looking at them but you still have to sell them..That's basically all i'm doing..Cheers pal..
