I'm Muslim and I don't celebrate Christmas but I have to say, this was my favourite episode of chefs try of buzzfeed oz. Everyone was so polite and every dish looked so festive and happy. The vibes were just lovelyyy of this episode. Cannot wait to see more of these 4 chefs together!! ❤️

I don't celebrate it but I'm not gonna deny, the colours and the aesthetics will always be so pretty to me! And my neighbours make some delicious bakes around that time! Last year they gave me a mini gingerbread house the size of my hand that was decorated like a cute little cottage and it was DELISH! It was soft, chewy and had warming flavours and decorated with piped marshmallow as well as some candies. Even if I don't celebrate it, my neighbourhood becomes much more inviting and the season is so beautiful!

In all fairness, for the last dish, those brussels sprouts are like fifty percent butter and beef juice by the time that dish has finished roasting. Damn straight they taste delicious. I don't even like brussels sprouts and I'd eat the shit out of those.

For me the salmon was the most Christmasy Aussie dish. The others all seemed like winter dishes to me. I can't think of anything worse than cooking a roast of Xmas day, too hot for that shit.

A big roast is still a very popular Christmas dish in Australia despite it being summer. In my family we generally have a big christmas dinner at lunch time (with Ham, Pork and Turkey) and then later in the evening will eat a smaller tea/supper of salads, cold meats, prawns or even just grazing foods like cheese platters and dip etc.

As a northern hemisphere resident I didn't compute that of course Australia is the country that celebrates Christmas at the Summer Solstice. I was reminded when the salmon dish came out. I wonder if there is a mid-winter (i.e. summer solstice) festival there. It would make sense because the reason our mid-winter holidays exist is to provide cheer and community when days are at their darkest.

Funny how Ryan doesn't approve of bell peppers for the holidays. They're so bright red and green! For me, garlic is the flavor I love but don't want at holiday meals. Funny how our own personal traditions get shaped over time (mostly in childhood, I bet). Also, cherries for Christmas sounds ridiculous for a North American, but it makes a lot of sense for Australia!

A whole piece of meat might get a weird shape during the roasting process. The twine keeps the shape of the cut, so the meat roasts evenly all over and the slices come out in a uniform shape.

I like to switch it up. This year I made a whole ham and a duck. Last year was prime rib. Some years it's turkey and ham. Turkey and ham tend to go on sale at Christmas some times prime rib does too.
