I always did fried rice in a rush, but after seeing your video, I want to try to give it the preparation it deserves! Btw you missed a letter 'replace the por with' (*pork) in this comment. Also I think the music got better! But I did not get what you meant with pouring the soy sauce around the pan 8:36, it mixes better? And thank god you did not put peas in the fried rice

@@jickhertz4124 Thanks Jack!! I fixed the "Por"😂 When you pour the soy sauce on the edge of the pan, you will instantly smell the beautiful aroma!! That's the good stuff. That burnt soy sauce is the key for a good fried rice in Japan!!😉👍

Made this tonigh, didn’t have the kombu, but used smoked bacon and chicken instead. The technique of reusing that oil was great and puts so much flavor to the rice, the fried garlic finished it of. So rich in flavour, it explodes in the mouth, my kid ate 2.5 plate.

Great tip on soysauce. Its called "charring" and meant to be almost burnt quickly on high heat. Explodes the inner layers of soy sauce and the difference really comes out with craft vs commercial soy sauce. I usually also add the scallions early to create scallion oil. When combined with eggs, i don't know why - it becomes magical.

Made a modified version of this recipe, using chicken breast and cooked ham. Your video really helped with the different steps involved, helped me a lot! Recipe turned out delicious, haven’t had such a good fried rice in any restaurant!

I made this tonight, though I had to make some modifications because I was out of scallions, I used shallots and white onion instead. I splashed a bit of mirin as well, turned out really good.

Looks delicious! What brand is the gas stove? I bought two on Amazon and they were both just useless Either not powerful enough or had the top fitted for tiny pans, with “spikes” preventing any larger pan to fit…

Hi Anton!! Mine is actually pretty cheap stuff from a discount shop like $10 😅 Have a look at your local electrician or camp stuff store to find the one that fit to your pan👍 When I buy cooking equipment, I always watch and touch it in actual shops. So make sure I get good feeling before pay for it 👍 You don’t have to buy super strong gas stove. Just wait preheat your pan until it’s really hot😉 I preheat my pan for 5-6 mins with my cheap stove😅😅😅

En Perú tenemos un arroz similar "arroz chaufa" y en los restaurantes no entiendo porque masacran el arroz, de hecho por eso no es tan rico. Me encanta tu forma de enseñar y me hace mucho sentido. Cocino así también mi arroz. Buen video!

Es que fijate que el Dashi es el que le da ese sabor peculiar. En mexico tambien hacemos arroz frito, pero tampoco lleva Dashi como el Japones. El dashi es algo similar a como se usa el caldo de pollo en latinoamerica. Pero el dashi le da sabor diferentes porque lleva sabores de mar ademas de sabor a ajonjoli. Intentalo y veras que si tiene su saber muy diferente.@@milameda
