Best clam chowder we've ever had and it will definitely become a family tradition. I used pancetta in place of bacon, corn starch in place of flour, mixed red and golden potatoes, used one large can of dark clams and 2 small cans of white clam meat, and to sweeten things up, I added sauteed whole scallops just before serving. :-)

Question on the roux: I would usually mix the flour in the the bacon/onion/celery and cook it out. What is the benefit of doing it separately? Better control over thickness? Great video!

In my experience you can absolutely add the extra fat and flour to your aromatic vegetables. Just temper the heat a bit but that always has worked for me. Great video regardless of how you thicken the soup.

Hi Chef!!! I am currently 15 years old and ever since the age of six I Have been eating clam chowder one day I told my dad how much I loved the clams and he said that's odd that's not like you so I showed him how I was brave and ate the clams but it turns out I only ate the potato squares and didn't like the clams. From that moment on I felt like a weirdo. And started eating cream of potato soup from then on so in the end I never really did like clams keep up the great videos!!!

Nostalgia and a nightmare at the same time 😂... I used to make 25 gallons of clam chowder twice a week all summer long for 7 years. Lived and worked on the Maine coast in kitchens my whole life. Still live on the coast just no longer working. 😅 We had the perfect setup back then in the early 2000s. Most of the restaurants were seasonal "and if isn't go find one that is" where we were located tourist central, the whole coast was and still is just loaded with restaurants and bars for the tourists mostly. So anyway we'd work from April to October and at the end of the season the U.S. department of labor would consider it a "lay off" so we would move down to Florida for the winter and collect unemployment benefits. You had to fill out a ticket every week and mail it back and put three jobs that you "searched for" 🤭... Another cool thing was making friends with all the lobstermen and fishermen that would bring in the fresh fish, scallops, mussels, clams oysters etc. Free seafood all the time and we all meet up on the weekends and stuff after work and party 🎉. Another thing to note is from April when we first opened for the season until the end of May we were pretty slow until memorial Day weekend that's when BOOM! And then Labor Day weekend right at the beginning at the beginning of September it slows write down instantly. But the thing about the fall is we get busloads and busloads mostly elderly people doing foliage tours checking out all the colors change on the trees. So that kept us a little busy in the fall. Well the point is so we were really only working balls to the wall for 5 months. 5-12 hour shifts. I have so many great stories. But that will conclude this one. Go enjoy some Chowdah!

I made this last night and it was amazing! thanks! Now no more canned clam chowder for me! The only better chowder I've ever had was at the German restaurant on Venice Beach. But they had fresh clams at their disposal because of their proximity to the ocean. I live in the desert southwest, so I used that same canned ones you used. That was the only thing that was better about it. Other than the clams, it was pretty much the same. Great recipe!

oh wow, you make it look so easy, i'll be sure to try it out! clam chowder is one of my favorites, the store bought can may be easy but who knows what else they add in there.. starting to cook from fresh wholesome ingredients now and these little tips really help out! like dicing in the same size for even cooking and sauteing while scrubbing the bottom, waiting for onion to be translucent, stirring heavy cream a bit at a time etc, very good to know for a beginner cook like me! :D

I live just across the bay this is actually better than the San Francisco clam chowder.. it's just terribly hard for anybody to make San Francisco sourdough bread. I buy the bread bring it home and make it just like this and it is excellent Great job Chef!!!

I have always wanted to make a clam chowder but thought it would be a difficult soup to make. Man…. Was I wrong. So simple but damn….. this was delicious. My only mistake was I did not abuse all the rue so it was more like a soup than thick chowder. Will absolutely keep this recipe as my go to. THANK YOU from Utah

Thanks for the video. Also if you buy fresh whole chowder clams put in freezer take them out after 3 hours you'll see they open by them self, then scoop the meat with a clam knife, use that awesome real clay juice and add also minced, it will be out of this world.

Good recipe. I was glad your recipe had some volume to it. I used Cento clams and not sure if my taste buds are off but the clam flavor wasn't coming through so I added an 8 ounce bottle of clam juice...not sure if it's me but I'll have some more tomorrow. I like this recipe, sometimes I use whole clams in the shell, the taste is great but the clams really need to be diced, they can get chewy if over cooked..GOOD JOB CHEF...👍

Hey Jason, looks delicious. I noticed you used tabasco on your chowder in the beginning of the video, and I also like giving them a little bit of extra kick, so when I make a chowder at home, I tend to add a tiny bit of red curry paste. Changes the hue a little bit and gives it a nice spicy character. Also, if you get your hands on some wrasse (ballan wrasse, species of fish) you can make an absolutely amazing stock on that. They're extremely bony, but packed with flavour.

I remember going to Alioto's in the 80's, when the Aliotos actually owned the place. I had frequent'd the wharf for many years, and remember when they actually put clams in their soup.
