This is a winner. Cooked a 1kg turkey breast from Marks and Spencer at Christmas 2022 and 2023 and have never experienced such moist, tender turkey. I cooked my turkey breasts for 1 hour 20 minutes at 180c and rested for 15 minutes. The brining will prevent the meat from dying out if it is cooked for too long.

I did this last year and was one of the most stress free and excellent tasting Christmas dinners I have ever done. Everyone loved it. Doing it again this year. Make ahead gravy with roasted chicken wings, veg and herbs.. not much to do on the day apart from some roast potatoes and veg. Nice one Tom

I made your bacon wrapped turkey. It was great. The gravy really good. Thanks, Tom. I will forever brine my turkeys. So juicy and tender.

Canny! Will have to add this to the "try very soon list". I am making your Turkey Roll again this year - the stuffing from that recipe is amazing and a top local chef even asked me for the recipe a few years back haha

I'm so glad to hear that simple sentence about the sugar content of shallots vs onions. I've wondered what the difference is between all those things in the onion family and this is so helpful. In general though, what a legend. Thanks Tom, I really appreciate it.

An hour and a half at 180°c seems a long time for that piece of meat. I reckon it would be no more than an hour. A large roast chicken cooks in an hour.

Why do chefs like him and Ramsey give arbitrary cooking times? People won't have a hope in hell of cooking a great turkey breast with that rule. Temp Temp Temp. Pull it out at 150F, how hard is that to figure out with a $10 thermometer?! It's like these TV chefs are too proud to admit they probe their meat. Ramsey was always the same in Hells Kitchen with the Wellingtons.
