Yah we live in BC and the best way we have found is to buy them fresh and put them into heavy duty zip lock bags and freeze them. Don't score them or wash them, freeze them fresh bought and dry. To cook just put a serving into aluminum without scoring and roast for about 30 minutes at 450 in the oven. Take them out and wait 5 minutes then cut them open and enjoy. We're eating nuts from last year and they taste fine. We usually freeze about 30 pounds each year so there is enough for everyone to enjoy.

well I don't really check on them. in the beginning I did get some rotting due to excess moisture in the sand but I've found a good level of dampness of the sand and it seems to work so I don't really need to now. plus I am regularly eating them, so I get to see the top layers regularly

Interesting I tried finding the best method and ended up chucking most of them in the freezer.. for some reason I did that with the most and best ones. They taste like shit now (basically after they get frozen once) . Since you got experience with preserving. Any idea how to get some taste back after they've been in the freezer (raw)? Also how often do you check on them in the sharp sand? and how do you do that, do you just get everything out of the bin and start the entire storing proses all over again?

Make a light salt water at a concentration of 3 to 5 percent and let the chestnuts soak for about 6 hours. The concentration of salt water is about 3~4 tablespoons of salt based on 2L of water. If you think it's a bit salty, that's enoughAlso, if you soak chestnuts in salt water for too long, the salty taste may become clear, so check the time not to exceed 10 hours. Chestnuts floating on salt water are proof that they are hollow or eaten by insects. Please pick one After the last screening process, rinse thoroughly with running water and remove itThere is a very important process before storing clean chestnuts.It's to dry it without leaving any moisture. You must dry the water completely in a cool, shady place with good ventilation to prevent rot during storage.
