Can't wait to try these. If I used a mixer instead of by hand. Would it be best to mix with a balloon whisk or pastry attachment?

Machine totally fine use the attachement for making pizza dough then finish by hand! Let me know how you get on!

Wow, that dough looks beautiful! This reminds me a little bit of Mexican buñuelos, it’s basically like a fried flour tortilla, then dusted in sugar and cinnamon, or the way I prefer them, coated in a thin sugar cane syrup 😋 I love how thin, crispy, and puffy these look! They look amazing! 😋
