Chicken Asado (or Asadong Manok) is a popular Filipino chicken dish originated from the province of Pampanga. With very simple ingredients and the cooking process is not so complicated.
Luto ng manok na may unti asim, tamis and alat na hahanap hanapin mu.
Ingredients:
3/4 kilo chicken
2 pcs quartered potato
2 pcs sliced onion
4 pcs cloves minced garlic
4 pcs tomato
2 pcs bayleaf
2 tbsp liver spread
2 tbsp tomato paste
5 to 6 calamansi
Pepper and salt to taste

1/2 cup soy sauce
1 liter Water
1 tbsp butter
Procedure:
1. Prep chicken by cutting into desired size. Wash and set aside.
2. Marinate chicken in soy sauce, calamansi, and pepper for atleast an hour or overnight.
3. In a pan, pan fry potato until slightly golden. Remove when golden and set aside.
4. In the same pan, melt a bit of butter. Add chicken one at a time, skin side down. Sear chicken.
5. When seared both sides, remove from the pan and set aside.
6. On the same pan, saute onion, garlic and tomato. Completely cook tomato.
7. Add water, bayleaf and tomato paste. Simmer until reduce.
8. When reduce, return chicken into the pan. Add potato. Cook for 10 minutes.
9. Season with pepper and salt to taste.
10. When fork tender, turn off fire. Serve and enjoy.
