Ingredients for Chicken Biryani
•• MARINATE CHICKEN
Chicken leg or breast piece 1 kg
Red chilli powder 1 tsp
Turmeric powder 1 tsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Black pepper powder 1 tsp
Salt according to taste
Ginger Garlic paste 2 tbsp
One medium size onion paste
Fried onions ( Birista) 2 tbsp
Oil 2 tbsp
Homemade Biryani moshla 1 tsp
Yoghurt/curd 4 tbsp
Keora water 1 tsp
Rose water 1 tsp
Meetha attar 3-4 drops
••PREPARE THE RICE
Basmati rice 500g
Cheesecloth ( For making small mashla potli)
Bay leaves
Jaitree
Black cardamom
Nutmeg
Green cardamom
Cinnamon
Clove
Shahjeera
Star anise
Lemon juice 1 tbsp
Salt According to taste
•• PREPARE THE CHICKEN
OIL tbsp
Ghee / clarified butter 2 tbsp
Shah jeera 1 tsp
One medium size chopped onion
Marinated Chicken
Meetha attar 2-3 drops
ASSEMBLE AND LAYERING
Prepared Chicken
Potatoes/ Eggs ( Boiled)
Milk + Aromatics ( kewra water 1 tsp, rose water 1 tsp, meetha attar 3 to 4 drops)
Fried onions / Birista 1/2 cup
Biryani moshla 1 tbsp
Ghee / Clarified butter
Khoya kheer 1/2 cup
Saffron + colour( Saffron + orange food colour mix in warm milk)
Bay leaves
