Laura, I just made this overnight-I'm a night owl-and had it for breakfast(!) The recipe is perfectly balanced; the dark chicken (thigh) meat works as well as you said it would, the veggies harmonize perfectly, and the dumplings have exactly the right fluffiness and richness. I lacked chives and parsley for the dumplings, so I substituted the tops of green onions and dill weed and they were fine. My only extras were a bay leaf, a single clove of garlic cut in half, and a dash of cayenne, all in the gravy. My thanks to you and Joe for all the hard work on your videos! I've watched dozens of them now. The pacing is PERFECT and the high definition adds so much. You two are young world-beaters and I admire your ambition, personableness, and evident love of family and each other. Bless you both. -Don in Indiana

You have got to have one of the best smelling houses on the block. That looks very much like my grandmothers and she could cook. I think the hardest part for many people is getting those dumplings right. Please don't take this wrong but your going to be one heck of a grandma. Thanks for a great receipe .

If you want those dumplings a little fluffier and not so dense or 'gummy' from the steam dripping back down on them from under the lid, cover the pan with a towel, put the lid on that then bring corners of towel up so they stay away from the burner. Take lid off after cooked halfway and leave lid off to finish cooking. :) My mom always used Bisquik, and she taught me that trick. The first time I told my man I was going to make chicken and dumplings, he said he doesn't like them because they are always 'gummy' but after I gave him "the LOOK", he said he'd try mine. He could not believe how light and fluffy and NOT GUMMY they were!....H said I could make them any time and he'd EAT them.....Personally I like them a little 'gummy'! lol

The first attempt was 15 years ago and it a complete fail because I didn't know you had a recipe to follow. Today's batch I followed your recipe and it was a HUGE home run. I'm a 5th generation Kentuckian and my great grandmother always made buttermilk drop dumplings, and omg they are so fluffy and so fantastic! Her recipe has passed down from her to my grandma, to my mom and now to me. My Mom makes killer dumplings and my best friends grandmothers dumplings are famous county wide! We boil a whole chicken cause we end up with a weeks worth of meals out of that one bird. Then for the dumplings we use flour and buttermilk and shortening and salt and pepper and some baking soda. We just mix it all up and drop it all in! I'm salivating just thinking about them!

Bless you, Missy Renfro! My grandma was born on a wagon train in 1876, and I was a cooool cat...but NOT too cool to listen when she taught me about cooking. She made coffee in a frying pan, when it boiled she dropped ice water (I tblsp.) in it and grounds went to the bottom! All my hot rod friends hung out at Grandma's for coffee. (and stories!)

Laura your recipe is lovely. Being older, and from the south, I must tell you that when chicken and dumplings were made by my grandmother, they were made when my she would kill a rooster, or an old chicken. The old chickens were tough, and they had to boil forever. The fatter they were the better. The grease would sit on the top of the pot. That's about all you could do with that old chicken, but good? You bet. Today thankfully we don't have to kill the old red roaster. I bought a package of red lobster biscuit mix and I tried making my dumplings with the flour mixture, (adding a bit of extra flour when I worked the dumplings) and then poured in the pack of garlic seasoning. Yum!

Here's a lil secret for the dumplings...For those of you looking to make this recipe but dread making the dumplings from scratch or just want to speed up the process a bit, you can actually use a can of biscuit dough (w.e your favorite brand is, I like Grands biscuits kuz they have an almost buttery flavor which melds really well with the chicken/gravy). Just remove the dough from the tube, form dumplings to your preferred size & drop them into the water! Keep in mind that the smaller the dumplings the faster it will cook, so try to make the uniform in size. You want to do a "test dumpling" first so you can find out exactly how long they'll need to cook. Hope this helps! **This is closer to a more traditional Czech style dumpling so it's not going to have the seasoning like Laura's recipe does

I made a huge batch of the chicken soup without the cream and dumplings, separated them in little containers for each meal. When I come home, I thaw out & heat a tub and as it boils, I add the cream and prepare the dumplings and scoop in the soup. It is like you just made it. It's so much easier for this working woman to feed the household.

My family makes this completely different haha! What my dad does is red kidney beans, chicken and dumplings. Boil the red beans with green onions, and thyme. While that's going, he seasons the chicken with an herb mix, salt and pepper, and then fries them just to get a coating on them. Adds that to the red beans boiling, along with frozen sweet peas, a little bit of butter, carrots, and then gets started on the dumplings. What we do for the dumplings is just regular flour, salt, and water, and work that till the dough is soft. Cut the dough into small pieces and roll them into finger shapes. Bring that to a little boil, then puts it in the oven to finish cooking. Yes the pot gets a little dirty, but it tastes AAAMAZING!!!

When I make my chicken and dumplins...I put a whole chicken in a pot of water with salt and a whole onion in the morning and let it go for most of the day until chicken is done. Once done I take chicken dude out and let him cool until I need him again. During this time I season my broth with salt and maybe some chicken stock. when time I make dumplings using flour shortening, butter milk and a little salt make my dough and put it up in to pieces. Before this I have already deboned and shredded my chicken guy so it up the yummy bits back in to pot and warm it through and then I drop my dumplings and serve it with baked apples and veggie cassrole.

My folks made chicken and dumplings every Christmas Eve from when I was little. They used chicken thighs sautéed in a little oil and left them on the bone. Then they made noodles from flour and eggs, and cut them into squares (as opposed to strips, which were used in chicken noodle soup). These are dried in the oven for a bit and still have flour on them, which thickens the soup. Served with French bread.

I have noticed that people in the states or uk use so little seasoning. Like if salt and paper would be the only spices that exsist. Why not add some paprika, herbs either fresh or dired, garlic, some granulated onion maybe etc. I have about 50 different herbs, spices and mixes of seasoning in my pantry. If I would season any meat with salt and peper only it would have no flavour at all for me.

salt and paper? I've never tried that before, I've tried salt and pepper but never salt and paper, I've also never met anyone in the U.K. and the states that uses paper as seasoning, we use it for writing but never seasoning, I wonder if it gives it a woodsy taste from the trees paper comes from.

Laura, I had been cooking all of three weeks. My first try at beef stew was just okay. My second try at chili was better than the stew but again just okay. Then I saw your beef tacos and they turn out the bomb. I will check out you beef stew next time and chili next time. This Sunday I will do your chicken and dumplins. Your video smells great. For thinks like pot pie we always use bone-in skin on breasts and roast them in the oven, then remove the skin and pull off the chicken... the chicken ends up tender and juicy this way and it is little fuss... occasionally I will poach chicken breasts for chicken and dumplings, but I think it tastes better with the roasted breasts. We don't like dark meat here. I always make my dumplings with buttermilk, I've never tried it without... might give this a go next time...

My dad makes THE BEST chicken and dumplings I've ever had. Its so simple and delicious. For our dumplings, we only do flour, eggs, and water. They absorb the other flavors in the broth. We just do big blobs with a fork in ours to make them each have their own unique fluffy 'cloud' shape :)

We make them like this at home, but I recently found out my mom will take some of the chicken broth out of the pot and use it to replace about half the water. It gives your dumplings an even better taste! I'd definitely recommend trying it!

I have been using the Better Than Boullions for a couple yrs and LOOOVE them. They aren't cheap but it makes so much stock that it turns out to be a good bargain. The taste they give dishes turns good into great. I use the beef more, it is a must for adding a teaspoon to philly cheesesteaks about half way through cooking the meat WOWZER. Also add to meatloaf and meatballs, super awesome taste. Be careful of adding salt until you taste with the Better Than Bouillon. Great stuff.

Viewer notice, you can buy red or white wine NO alcohol, use same ratio as recipe, and you can drink it, do not buy cooking wine

caramel delights It's an American classic from the South. A dumpling in this context is a biscuit dough, which is a mixture of flour, shortening, and liquid (water or milk or chicken stock).

I agree with you 100% about chicken and dumplings being comforting. It's like a warm hug on a spoon. I use Bell's poultry seasoning (which is a pain to find outside NE and the mid-Atlantic), and always add fresh dill in chicken soups, just like my Gramma Emma taught me.

Hello Laura just wanna say I really enjoy watching your show it has given me so many ideas about what to cook and since its close to the holidays I felt it would be right to try and make my grandmas chicken dumplings all be it its a bit different then the way you make it, I remember she would get a large whole chicken then put it straight into the oven and while the chicken was cooking she'd make the dumplings and they were always big three inch squares then she'd take out the chicken which smelled sooo good and would peel right off then she'd mix up some flour in a pot add the seasonings the veggies and some chicken stock and mix the rest together and there is my grandmas chicken and dumplings which were always my favorite as a kid
