Wow, what a true blue aussie. The addition of the lettuce is quite the spectacle, as it adds some magnificento crunch and textures. Having the ham in between the cheese and the sauce is an extremely big brain move, which allows the rest of the dish to avoid sogginess. Great 200IQ play Huey, what a legend mate!

Hello Iain. Great to see you on here!! I used to be one of your suppliers to probably all of the restaurants you were at all through the 80's and early 90's. I met you a few times and you were always respectful and interested. You asked me a few times what the ingredients actually were. Memories are wonderful things.

I was one of the sales men that introduced the original King Island dairy to Melbourne restaurants. As well as Timboon farmhouse cheeses, double cream and marscapone. I had Italian chefs all over Melbourne almost embracing me when we started with the marscapone.
