Chicken in black pepper sauce is a classic Chinese dish where the chicken is smothered with black pepper sauce, garlic, soy and other ingredients to give the dish a special aroma. Freshly ground pepper is used to make the chicken soft. This way, the chicken also retains its taste and texture for a longer time. It's a simple dish, that's incredibly easy to make. You can halve the recipe to make enough for 2 people in less than 10 minutes. The simplicity of the preparation and the stunning contrast created by the flavors makes this dish unique and also one of my favorites. Do try this delightful and enticing dish, you will not regret it!

Ingredients:
½ kg boneless Chicken (cut into strips)
2 big Onions diced
1 cup Capsicum diced
2 tbsp Garlic finely chopped
1 tbsp Ginger finely chopped
Spring Onion finely chopped
3 tbsp Black Pepper sauce
2 Green Chilies (de-seeded & chopped)
¼ tsp Fennel seeds
½ tbsp Soy sauce
1½ tbsp Corn flour
1 tbsp freshly ground Pepper

Directions:
• Begin by washing ½ kg boneless chicken strips with some turmeric powder. Set aside.
• Make pepper by grinding some fresh peppercorns.
• Heat 3 tbsp oil in a pan. Add ¼ tsp fennel seeds, 2 deseeded & chopped green chilies, 2 tbsp finely chopped garlic and sauté for a minute.
• Add 1 tbsp finely chopped ginger and cook for a minute.
• Add 2 onions diced and cook until the onions turn translucent.
• Add in the washed chicken, ½ tsp salt and mix well. Cover & cook for 4 mins on medium flame.
• Add 3 tbsp of black pepper sauce, 1 tbsp freshly ground pepper, ½ tbsp soy sauce and mix well. Add 2 cups of water, 1 cup of diced capsicum, ¼ tsp salt and mix well. Cover & cook for 2 mins on medium flame.
• Add ¼ cup water to 1 ½ tbsp corn flour, mix well and set aside.
• Add some spring onions, Corn flour-water mixture and give it a quick mix.
• Garnish with some coriander.
• Serve hot with rice!
