This looks absolutely delicious, Kathrina! I might have to see if I can find a vegan type pie crust so I can try it. I love leeks! Such an under used veggie here.

You could probably us a vegetagle shortening like crisco. It's a great pie we are having it for dinner tomorrow. x I'm hoping to do a Potato and Leek Soup next week x
