What's the difference between chow mein and lo mein?

@@god-codm9676some restaurants list it as chow mein but it’s actually more so a Lo mein, you know when you see Lo Mein it’s a noodle dish like this. In American Chinese food, chow mein was traditionally a mixture of veggies, mainly bean sprouts, and meat stir fried and a light gravy was usually incorporated my using a corn starch slurry after some of the water content was cooked out of it and crunchy noodles put on top. But like I said, some restaurants will list chow mein and actually mean noodles, and they are usually much thinner than the traditional lo mein style and vice versa. Just depends on the restaurant in question I reckon

I do a spin on this with some roasted red pepper, caramelized onions, garlic, and carrots. For the sauce I use a mix of Hoisin sauce, Sweet & Sour sauce, soy sauce, and a little hot sauce.

I don't understand why you boiled the chicken after seasoning it with salt mixed with baking powder. By doing so, the seasoning is diluted and washed away into the boiling water. You are left with bland cooked chicken

If you can't find noodles labeled "lo mein," look for "thick egg noodles." Regular spaghetti works, too!

Boiling the chicken after marinating? Normally in Chinese technics cooking , the chicken strips are stir fried in a little oil and that way it keeps all that good flavors you've put in !!! Just saying!!!
