Ingredients for chicken stock:
Chicken half kg
7-8 Black peppercorns
4 Garlic cloves
1 tsp Salt
6 cups Water
Ingredients for soup:
5-6 Tomatoes (peeled)
1 tbsp Garlic (chopped)
1 cup Macaroni
1 cup Capsicum (chopped)
1 cup Carrots (chopped)
4 cups Chicken stock
1 tbsp Cornstarch (mixed in water)
1 tsp Red chili
1 tsp
1 Tbsp Salt
1 tsp Black pepper powder
2 tbsp Soy sauce
2 tbsp Chili sauce
1/2 cup Green onion
1 cup Shredded chicken
Directions for chicken stock:
In a pan add chicken, water, black peppercorns, garlic, salt and cook for 5 to 6 minutes.
Remove skim. Then cover it and let in simmer for 20 to 25 minutes or until fully tender.
Shred the chicken, strain the stock and set aside.
Directions for Chicken Macaroni Soup:
In a blender add peeled tomatoes and blend until you get a fine paste.
In a pan heat oil, add garlic, green chilies and sauté for a minute.
Then add tomato mixture, chicken stock, elbow macaroni and cook for 10 to 15 minutes.
Then add capsicum, carrots, chili flakes, , salt, black pepper, soy sauce and chili sauce. Cook for 5 to 6 minutes more.
Then add green onion, corn flour mixture and cook until soup get thickens to your desired consistency.
Serve hot and enjoy.
your Chicken Macaroni Soup now ready to serve.
Preparation time: 15-20 minutes
Cooking time: 40-45 minutes
