this looks very tasty. just one comment, if the chicken is to be cooked in a pot i remove the skin this way the gravy penetrates the chicken better l would imagine that limpy skin isn't very appetizing. at any rate great job and good recipe.

Hello Soma, It is nice to meet you. You are right there are similar taste and techniques between each cuisine. The first time I had Indian food (1986) at the Bombay Palace in Houston, Texas the smells reminded me of my grandmothers Mexican cooking. There were very familiar smells and taste. As I learn about Indian cuisine I found so many of the same ingredients but treated differently. Chilies are the gift that Mexico (Native Americans) gave to the world. Can you imagine Indian food without this ingredient. I'd love to hear about your cooking adventure when you make the recipe. Thank you for writing and have a great day!

There are many types of mole through out Mexico, some of which have chocolate as part of the recipe. This recipe for Red Mole is based on how my Grandmother prepared her recipe and the cooking techniques she learned from her mother when growing up in Chapala, Jalisco, Mexico. Of course you can always add chocolate to the recipe if you like. That is the great thing about cooking recipe we can add or subtract ingredients according to our own taste.

Hice un poco de investigación sobre los pimientos que son más comunes en Perú a los que tendrías acceso y recomendaría utilizar Aji Panca seco y Aji Mirasol para hacer esta receta. That is what I find so fascinating about food culture and the cross over of ingredients from one cuisine to another. Mexico gave the world chilies while Asia gave the world spices. It was the Spanish who brought spices to Mexico while they ruled, but it was the Moors (Berber and Arab peoples from North Africa) who influenced Spanish cuisine for 600 years. I love Indian food because of the similar flavors to Mexican food. I think of it as comfort food. Hi Marcie, I have learned long ago that there are many ways a recipes can be made based on regional taste, availability of the ingredients, or ones personal likes. My grandmother was from Chapala, in the State of Jalisco, Mexico and this recipe is the one she made most often for our family gatherings and what she taught my mom to make. On very rare occasions she would make a green mole or black mole for my grandfather because it reminded him of his mother's cooking. I appreciate the variety of moles that are made, the ingredients each one utilizes, and the complex flavors each one produces. As I say to my cooking students add or leave out ingredients according to your own taste and make it your own. Cooking is a form of creative expression and joy to be shared with friends and family. Mole is as diverse as Latin American, thought it is an authentic Nation Mexican dish, I am American of Mexican decent, I make my mole differently then demonstrated here. Authentic Mexican mole must have chocolate as one of its main ingredients. I love, love mole, I always make it with lots of sauce so that I can make chicken enchiladas at another time. Mole is not thicken with flour, I fry corn tortillas and a bolillo, and puree that along with some of the chicken broth I then proceed to make the mole. Mole has a sweet intonation, I don't like overtly sweet mole, I like it well balanced, without the chocolate it is not mole, it is just plain red chili.

Hello Barbie, Some moles do have chocolate. This recipe is based on my grandmother's recipe. She was from the town of Chapala, in the state of Jalisco, Mexico. Her mole is a Red Mole (Mole Rojo) and focuses on the mix of chilies and spices and cooked and simmer to create the deep rich flavor I grew up enjoying. She learned to cook from her mother and grandmother. Each of them passing down their knowledge and love for cooking. Mole comes in many colors and flavors. From black, red, green, white, and brown. Every region of Mexico has it own specialty when it comes to mole. Feel free to adjust or add ingredients to your liking. chef querìa decirle que hice el mole aqui en Perù con ajies peruanos, si quieren intentar esto en casa algun peruano, le recomiendo que si pueden subsituir. chile mulato: Aji Panca., en otra receta usan guajillo, se puede substituir tranquilamente con mirasol. para el poblano usen morrón verde (yo seco los morrones verdes al sol y sale un chile muy parecido tambien al mulato) y un rocoto asado para el picor. pare el resto de recetas todo se puede encontrar acá en Lima. salio muy rico. tenemos un plato que se asemeja bastante al mole, se llama capulcra pero tiene menos ajies y se lo come con papa y es mas rojo

flalasap !! es una fortuna haberte encontrado por este medio, soy peruano y a mi tambien me gusta el mole!! no he tenido la oportunidad de ir a Mexico por eso no sabia que sabor tenia y al igual que tu pensé que no teniamos aquellos chiles que esta receta exige, pero si existen con otros nombres, lo unico es que los otros chiles se consumen en provincias y aqui el mas usado es el panca. Bueno, despues de muchos intentos fallidos por conocer el sabor del mole y despues de botar mis fallidos resultados , una tia que vive en USA me trajo amablemente el mole doña Maria( el cual se muy bien que como todos los productos envasados jamás igualarán a lo que uno prepara con sus propias manos) y la cosa es que me trajo tres vasitos de estos moles que por cierto tenian cierto aroma a café.....un dia me armé de valor y decidi prepararlo con todos los ingredientes incluyendo chocolate sol del cuzco (el cual ya tiene agregado canela y clavo lo cual tambien se le echa al mole) y el unico chile que usé fue el panca, me salió una pasta roja como el que le echa a los spaguettis y pensé que una vez más no lo habia logrado...y no fue sino hasta que recordé que el mole doña maria tenia olor a cafe de alguna manera, asi que de inmediato le eche cafe kirma(no recomiendo otro porque los demas son amargos) y ni bien le puse el cafe OH MARAVILLA ,logré aquel sabor de aquel vasito de mole doña maria pero mejorado !! .....siempre quise encontrarme a un peruano que me diera más opciones para prepararlo !! aunque me parece riesgoso el rocoto que mencionas porque pica demasiado ...igual sería maravilloso subas un video para peruanos de como preparar mole con tus ingredientes, te lo agradeceria!! posdata "dices usar aji panca y aji miirasol, perdonando mi ignorancia,¿que no son lo mismo? solo que uno es seco y otro fresco ,esa es mi duda,gracias!!

There is nothing that can transport me back to my early memories of childhood like the recipes and foods that my Grandma made. I knew I was loved by her through her food. One of the key ingredients for making Chicken Mole is time. Time to let the mole slowly simmer and reduce and for the chicken to become tender and succulent in the spiced gravy. What the fuck are you joking? Mole = chocolate. It's an Aztec dish, i.e. from D.F. This isn't mole whatsoever. It looks good but rename this chili paste concoction. Mole usually consists of chiles, veggies, tostadas and pumpkin seeds ground to thicken the sauce, and chocolate with a hint of sugar. And mole recipes vary in that some abuelas add banana, or garlic, or a habanero, but whatever you are making is not mole. I don't care what your grandma told you, unless at least it has a chunk of abuelita spiced chocolate it ain't mole.

Being exposed to culture of Mexico through the vast array of spices and ingredients that aren't present in traditional American food provided me with a passion and love for other cultures and their food ways. Hi Chris, There is a subtle natural sweetness to the mole that comes from the toasted chilies and the roasted onions, garlic, and pepper in the recipe. The sweetness is brought out while slowly cooking down the strained chili puree until it is reduced and thickened. Here is my Apple Pie Filling recipe. You can add premade caramels pieces to the pie filling and let them bake into the filling: Apple Pie Filling: ▸ 1/2 cup Dark Brown Sugar ▸ 1/4 cup Granulated Sugar ▸ 3 Tablespoons Cornstarch ▸ 1 teaspoon Cinnamon ▸ 1/2 teaspoon Sea Salt ▸ 2 lbs. Apples (peeled, cored, and sliced into 1/4-inch pieces) ▸ 4 Tablespoons Butter (diced into 1/4-inch pieces) Combine the dry ingredients and blend well Add the apple slices and toss to coat. The apples should moisten all the dry ingredients. Place the filling into the prepared pie crust and dot with the butter pieces. Place the top crust on and crimp together. Egg Wash and Bake for 50 minutes or 1 hour at 375℉ or until the center of the pie filling is bubbling. I wish you and your family a Happy Thanksgiving! Hello Sing Tat SUCGC, It is nice to meet you. This style of Mole my grandmother made didn't have chocolate. There are many styles and flavors of Mole. The recipe, ingredients, and cooking techniques along with time are essential in creating the best flavor possible in this dish. This is a lesson I've learned over the years from my grandmother, mother, and the chefs I trained under. "Always honor the traditions of a recipe." Because of the long process, Chicken Mole is typically made for special occasions such as weddings, births, and other celebrations. Although, to me a cold winters weekend is a perfect reason to spend an afternoon making Chicken Mole, Mexican Rice, Refried Beans, Flour Tortillas, and Salsas.
