My Friend Runs A Restaurant In Kolkata Which Is nearly 50 Years Old & He makes one of the best Nihari In Our City It Takes an Entire Night for Beef Nihari To Cook & Yes you Said It Right that it is an Insult Of Nihari to cook it in Chicken as chicken can never reach the taste of Beef Nihari the mellow of Bones in the beef is the real gold in Nihari and without it the real taste of Nihari cannot be Achievable

Totally agree..Its blasphemy..Dehli where nahari originates from used to have cooks make it all night long. Even in Karachi where Dehliites migrated to..beef was cooked all night long.
