A great midnight snack. In my Mexican kitchen we use pepper jack cheese with grilled onions and pasilla peppers. Yummy!!

Looks delicious! I think that the chicken could possibly be prepared ahead of time, earlier in the day, if you were having friends over for cocktails/dinner. This is a versitle recipe to have in your food repertoire. Can be lunch, snack, appetizer, or dinner(with chili, a salad, beans, etc) Anytime of year.

I like the trick of covering the bowl with a plate while the chicken cools. I guess it's common sense, but I never thought of it!

Hola, I'm making this tonight for my grandson. He's helping repair the fence that the wind storm partially knocked over. I'm using chicken that is left over from a Chinese chicken salad I made a few days ago. It has breading on it but I don't think that will matter too much. I'm serving just sour cream, homemade guacamole and salsa like you did with watermelon. Kevin, seriously you need to make the salad from a Chinese women called Madame Wu. It's on the link Not Another Cooking show. I'm not plugging that show but I did find this recipe there and the dressing alone will knock your socks off, sooo good.

Going to Get some Organic Chicken Vreast I have from Costco and Dice it up for this and we have a local (out of Denver,Co.) that makes Homemade Tortillas I can use for this recipe to make this ! I Saw This Just This Morning and It Inspired Me to Use those things and look for some Nice Organic Onion to add to it for a Nice Zing You Have Some of The BEST I've Seen On Here and I Even Got Your English Muffins Recipe awhile Back to Make Thanks So Much- My Mother Would have wanted Them Vs Store Bought "Thomas" in the '70's If we'd known how to do this ! Keep on INspiring Others !

Great video, Kevin! Suggestion: Place the plate right-side up over the bowl of chicken. It's less likely to slide around/off.

Hi Kevin, I love quesadillas, but always forget to make them. I don’t know if you’ve tried making homemade corn tortillas with nixtamized, maseca , but the difference is astounding! I bought a tortilla press and in less than thirty minutes you have the best tasting corn tortillas. I wasn’t a big corn tortilla fan before, but these changed my mind. Thank you Kevin. That looks so good. I am going to make that for dinner for my husband and I using soy curls as the meat and vegan cheese. Don’t cringe! I would love to have the real thing, but I cannot, for health reasons. You did show me a way I can get close to having the real thing though and I thank you. You are right. You can never get enough cheese! Also, thanks for the tip about the plate over the bowl with the chicken. I did not know that would help to keep it moist, but it does make so much sense. I love how we are never too old to learn.
