Very appropriate that you posted this video today. It’s a coincidence. I’m planning to cook a brisket today the Argentine way. On my Gaucho grill over oak embers. I’ve never cooked a brisket with this method. Even tough you were cooking different meat cuts other than brisket and different brand and larger Argentinian grill than I have, I still found useful techniques and helpful information here. Thank you. It all looked good Russ. I enjoy Raichlen’s products a lot.

Born and raised in San Diego been smoking and asando...same as asado forever....meat of choice tri tip Santa Maria style....plenty of chorizo....baby backs briskit....my rub I use salt..pepper...granulated onion and garlic and California or guajillo pronounced waheeyo chili powder NO SUGAR!!!!...let meat sit in fridge 24 hrs....really....really good with a fresh salsa of fire roasted tomatos...serrano chilies onion and garlic....most excellent.

Great cook Rus.i have always dug Latino and Asian flavors on the grill,ribs and chicken being prime examples of how easy it is to impart different flavors.Tri Tip is also great with any kind of flavor profile you can think of.The chicken looked great,and like you i also believe some cooks should have plenty of great sausages,so many quality kinds and great flavors to choose from.Look forward to more cooks on her.

Wow, that's a lot of food there Rus and it all looked super delicious. I do want to give your South American BBQ sauce recipes a try this weekend and see how they work out. I don't have a Santa Maria Grill but what I do have is a regular old school wood burning fire pit that I cook over at least three times a week during the Summer and Fall months. I can adjust the height of the grill grate accordingly but it's nowhere near as efficient as a real Santa Maria but it works. Thanks for sharing and Cheers to ya Rus!

Everybody is getting a Santa Maria but me.............I should try and build one, they sure look slick when it comes to controlling the heat. That sure looked like a good feed, looks like the barbecues we used to have down in Texas on an old barrel pit, the only thing missing was the chops and some roasting ears. Good video Rus!

In my opinion, SM has it's own distinct flavor that cannot be duplicated. It unique and really fun. I use mine 3-4 times a week.

I've been to Montevideo, Uruguay about 9-10 yrs ago and it was the first time I experienced meat cooked on an Argentinean style grill. It's like a meat tsunami down there. Truly awesome experience!

Nice cook! Here in CA this style of cooking is everywhere (drove by a large Santa Maria doing a ton of chicken in a parking lot last week). A good meat hooker is (IMHO) essential when cooking this way, making the flipping and moving of various meats MUCH easier, ~ $20.

Loving this new Santa Maria Grill bro. Maybe one day I will have one. Everything looks great. Is it difficult to cook multiple meats like that and stay consistent with the doneness? I'm guessing you really need to stay near by to monitor?

Yeah I’m really loving it too. It’s a very controlled way of cooking but does require frequent attention to the fire to maintain it. Knowing when to stage different meats out will come from experience in using it a lot. Just like any grill or smoker you have to get use to it and learn its behaviors

Thanks Tom! I’m going to enjoy this grill a lot! I ordered the lava rocks online. Can’t remember where exactly but I just Googled 100% volcanic lava rocks and found these that have been tumbled for the round smooth surface and fairly close in sizes, but of course the un-tumbled are also available

One of your best cooks yet on video. My kinda cooking. Punch you out some holes in that shovel to get some of the ash out of it because ash will smother out the heat. Awesome job on the recipes
