Chicken Steam Roast (Shadioun Wala)
INGREDIENTS;
Chicken: 3 kg
Ginger Garlic paste: 2 tbsp
Vinegar: 3 tbsp
Salt: 1 tbsp
Water: 2 litres
.
Marinate;
Yogurt: 250 g
Chilli flakes: 1 & 1/2 tbsp
Chaat Masala: 1 & 1/2 tbsp
Orange food colour: 1/4 tsp
Lemon juice: 3 tbsp
Salt: 2 tsp
Red chilli powder: 1 tsp
Garam masala: 2 tsp
Cumin powder: 2 tsp
Coriander powder: 2 tsp
Turmeric: 1 tsp

Lemon, ginger , green chillies (for steam)

Oil for frying
Water for steam
.
METHOD;
1: Put deep slashes on skinless Chicken legs.
2: In a big bowl , pour water, ginger garlic paste, salt & vinegar. Mix well.
3: Soak chicken in this water for 30/40 minutes , after strain and dry completely.
4: In a pan, heat up oil, and fry the chicken on medium heat until slightly brown. Once all pieces are fried, set aside.
5: In a bowl, add whisked yogurt, chaat masala, red chilli flakes, salt, chaat masala, red chilli powder, garam masala, cumin powder, coriander powder, turmeric, lemon juice and food colour. Mix all well.
6- Marinate the Chicken and set aside for 2 hours.
7- In a pot add water and put the steamer in top, cover with parchment paper, place marinated chicken. Place green chillies,ginger & lemon. Cover with parchment paper. Place lid on top, and any heavy pot to seal the steam.
8- Turn on the flame, cook on high heat for 10/12 minutes, then in low flame for 1 hour.
9- Ready, Serve hot. Enjoy !
