Chicken thigh and green onion
[Ingredients]
* Pepper oil
Coarse red pepper powder 3 tbsp (15g)
Cooking oil 1/3 cup (60g)
Green onion 1/4 cup (20g)
Sesame oil 1 tbsp (7g)
* Wasabi mayo
Mayonnaise 3 tbsp (45g)
Vinegar 1 tbsp (10g)
Brown sugar 1 & 1/2 tbsp (15g)
Fine salt 1 pinch
Minced garlic 1 tbsp (15g)
Wasabi 2/3 tbsp (10g)
* Mixing
Chicken thigh 1
Pepper (for seasoning)
Flavoring salt (for seasoning)
Onion 20g
Julienned green onion 100g
[Directions]
* Pepper oil
1. Finely chop the green onion by making cuts into fourths.
2. Put the green onion, cooking oil, and sesame oil in a pan and infuse the oil.
3. Slowly add the oil in a bowl containing red pepper powder.
* Wasabi mayo
1. Mix mayonnaise, vinegar, brown sugar, dark soy sauce, fine salt, minced garlic, and wasabi in a bowl and stir until the sugar is dissolved.
* Chicken thigh and green onion
1. Put the chicken thigh skin-side down on a pan and fry over low heat as if deep-frying.
2. Put julienned green onion and onion in a bowl or plate.
3. Cut the roasted chicken into decent sizes and place it on top.
4. Serve with wasabi mayo and pepper oil.
