Chicken wing pulao (serves 4)
Recipe:
5 tbsp vegetable oil
1 1/2 tsp cumin seeds
2/3 mace pods
4/5black cardamom
2/3 cassia bark
1 medium onion, finely sliced
3 small birds eye green chillies, pasted or chopped
1kg chicken wings, skin off or on into wingettes and drumettes
1/2 tsp salt
2 tbsp ginger and garlic paste
25g butter
475ml water mixed with 1 tsp cumin powder, 1 1/2 tsp coriander powder, 1 tsp red chilli powder, 1 tsp coarse black pepper, 1 tsp garam masala, pinch of ajwain and 1 1/2 tsp salt or to taste
4/5 drops kewda water
340g Basmati rice, then wash and soak rice for 25-30 mins and strain
2 tbsp fresh chopped coriander
3 tbsp dried fried onions
