YES! FINALLY! A NON-MEXICAN PERSON WHO MAKES AUTHENTIC MEXICAN FOOD. I've never eaten chilaquiles verdes (I grew up eating chilaquiles rojos), but this is almost exactly how you make enchiladas verdes, so it is all good. Your recipes and videos are top-notch, by the way!
