High temp cheese is used because is has a higher temperature melting point. It keeps the cheese from melting and draining out of the sausage when it is cooked.

Chili crisp is so yummy! I use it to make a kind Kim Chi with it, add it to diced potatoes and onions with eggs for breakfast. Mix it w sour cream, garlic and refried beans for a dip w corn chips!

This is awesome! I was recently given a chili crisp recipe book as a birthday gift as it’s a condiment I really like, so I’m glad to see that Eric also had the idea to use it for things like sausages!

I have been making a quite similar sausage for years only I don't use chili crisp but chili flakes. I know, not quite the same thing but at least you do not have the oil to get rid of.

I would add 10% crisp and perhaps a touch of cayenne pepper or whatever pepper you like to het that heat going!!

Adding the wrong style of cheese causes an issue when smoking/cooking. The best cheese I’ve found is an high heat resistant cheese (like the cheddar pieces from the Sausage Maker). 5:08
