Chicken breast coated with olive oil and a chili lime breading made from crushed croutons.
Cooked in the over on a non stick tray at 425 for 15 minutes.
Jalapeno cilantro sauce made with:
2 jalapeños
1 Serrano pepper
1/2 cup of mayo
1 cup rough chopped cilantro
Juice from 3/4 limes
Remove the stims from the peppers and place them in your blender, along with the mayo, cilantro and lime juice. Blend until emulsified and pour into a container and place in fridge until ready to eat.
Rice: 1 cup and 1 tbs of turmeric.
I used jasmine rice that I rinsed until the water was no longer hazy, and placed in 2 cups of water in a pot along with the turmeric. Stir, then cover and cook on medium/high heat until boiling and then reduce heat and let cook for about 10ish minutes? (I honestly don’t really set timers, on rice or pasta)
Remove from heat when cooked
Sautéed bell peppers:
1 red
1 yellow
1 orange
Cut the tops off and de seed, and cut peppers however you like. I personally cut strips.
Heat up a couple tsp of olive oil in a sauté pan, and place peppers in pan and cook until peppers are tender.
