- Thai Vinaigrette -
2 inches ginger, grated
1 - 2 cloves of garlic, minced
1/4 cup rice wine vinegar
2 tbsp creamy peanut butter
1 tsp chili flakes
2 tbsp dark soy sauce
1 tbsp honey
2 tbsp sesame oil
1/4 cup + 1 tbsp olive oil
Salt and pepper, to taste
Mix ingredients well using a whisk or a fork.
- Chinese Chicken Salad -
1/2 head Napa cabbage, sliced
1/2 head romaine lettuce, sliced
1.5 cups matchstick carrots
1/4 cup cilantro, chopped
6 oz snow peas, julienned
4 scallions, sliced
10 - 12 mint leaves, sliced
1 rotisserie chicken, meat removed
1 lime, squeezed
3 tbsp sesame seeds
1/2 cup chopped roasted peanuts
1/2 cup chow mein noodles
Toss together in a large bowl. Drizzle vinaigrette over the salad and toss again.
Some other ingredients you can try are : thin sliced bell peppers, cucumbers, uncooked ramen noodles, toasted almonds, wonton strips, edamame, grilled corn, mandarin oranges, tofu, asparagus, shaved Brussels sprouts, red cabbage, or bean sprouts!
