This was my favorite segment from the documentary, "American Eats: History on a Bun." I absolutely love eating Chinese food! I could eat it and never get tired of it, especially if it's hot and fresh! It's my favorite ethnic cuisine.

Kind of a sanitized history. It completely ignores the critical effect of the Chinese Exclusion Act of 1882, with its exemption for Chinese restaurant owners, and how that generated a massive boom in Chinese restaurant development across the country. Also, the scenes with the little boy going into a restaurant are from London. England.

Late response here. Also the fortune cookies were originally Japanese American and were items seized by Chinese American during the war time imprisonment of Japanese Americans during WW2.

The origin of noodles is Chinese.[2][3][4] The earliest written record of noodles is found in a book dated to the Eastern Han period (25-220).[5] Noodles, often made from wheat dough, had become a staple food for the people of the Han dynasty (206 BCE - 220 CE).[6] A Nature article claimed the oldest evidence of noodle consumption was from 4,000 years ago in China.[5]In 2005, a team of archaeologists reported finding an earthenware bowl that contained 4000-year-old noodles at the Lajia archaeological site.[7] These noodle were said to resemble lamian, which are a type of Chinese noodle that is made by repeatedly pulling and stretching the dough by hand.[7]

Chinese food can be so good. I especially like dim sum and courses of Szechuan. The title of this video should be: "A history of Chinese food in the US", because it's really more "hailing" the US than Chinese food.

4:21 In the 70s, my hometown saw an influx of Vietnamese. As I grew up, any missing dog or cat was blamed on them. I'm not sure what missing dogs and cats were blamed on before they came (possibly the Cajuns).

And the reason behind that as for the pigeons, is that if you serve something like that to Americans who don't a single shit about Chinese cuisine, they will give you shit about it. I've never heard of stories of "CAT" in the US and most Chinese people don't even eat cats.
