Im a Chinese from China, and Let me tell you this noddle dish is very authentic! The only thing different I will say might be the tomato puree she used in the video should go real diced tomatoes to give the fresh vege flavor to the sauce or soup. But I guarantee the way she did will certainly makes it delicious.

Add a tiny splash of water before you put the lid on. Could be that your pan is too dry for the process of condensation to occur :)

Other than the 1/2 c of wine, is there any other liquid added to the braise? It looks like there's not a ton of liquid before the braise, and then when the lid is lifted after the braise, there's loads of liquid. How does that happen?

That is true. I ran out of liquid as well and the meat wasn't tender yet. I doubled the liquid and spice ingredients and it still dried at the end before it was tender. The flavor came out strong and I added water.

She used an enameled cast iron pan. They have all heat the retention properties of regular cast iron with some non-stick properties, and because of the enamel coating, they can be used with reactive (acidic) ingredients like tomatoes, vinegar, lemon juice etc. They are *very* expensive, and you have to be careful not to scrape the enamel.
