Im a Chinese from China, and Let me tell you this noddle dish is very authentic! The only thing different I will say might be the tomato puree she used in the video should go real diced tomatoes to give the fresh vege flavor to the sauce or soup. But I guarantee the way she did will certainly makes it delicious.

Thank Marion ! I just made this, surprisingly I could not find any shao wine, but replaced it with mirin and still came out great. I will try to find it and make it again in the future.

You can use any wine. Do you have an allergy? All the alcohol cooks out in this recipe.

I didn't have nearly as much sauce left in the end. I wasn't sure what else I could add to try to get more liquid. Tasted great though.

Add a tiny splash of water before you put the lid on. Could be that your pan is too dry for the process of condensation to occur :)

Other than the 1/2 c of wine, is there any other liquid added to the braise? It looks like there's not a ton of liquid before the braise, and then when the lid is lifted after the braise, there's loads of liquid. How does that happen?

That is true. I ran out of liquid as well and the meat wasn't tender yet. I doubled the liquid and spice ingredients and it still dried at the end before it was tender. The flavor came out strong and I added water.

I really don't like 5 spice, they remind me of something you would put in a dessert recipe is it ok to leave out or should I put something in place of it? Also I can't find dark soya sauce anywhere. Iam in a small town in Canada. What can I do to replace that also?

Ask for purple haze or failing that looks like a cast iron pan

She used an enameled cast iron pan. They have all heat the retention properties of regular cast iron with some non-stick properties, and because of the enamel coating, they can be used with reactive (acidic) ingredients like tomatoes, vinegar, lemon juice etc. They are *very* expensive, and you have to be careful not to scrape the enamel.

I can't get shaoxing rice wine here in Norway. I know you can substitute for sherry, what type do you recommend? Do you have a preferred brand? This dish looks amazing and I'd love to make it for my family :)

We do it over an hour as the standard, but if you make it longer than that will enhance the flavor for sure.
