12 medium tomatillos (husks removed and rinsed)
1 tbsp avocado oil (or any neutral oil)
4 large cloves of garlic
1/2 cup packed of chile de arbol (stem cut off, leave seeds)
114.5 oz can fire roasted tomatoes
1 tsp cumin
1 tsp salt
Rinse tomatillos and remove husks. Cut in half and broil on 500F for 20 min. Cut off stem of chiles and toast on a pan for 30-45 seconds on medium high heat along with the garlic cloves. Place tomatillos, chiles, garlic and the rest of the ingredients in food processor. Blend till full combined. As chunky or smooth as your want.
Serve over rice or with chips.
