I just tried these chitterlings and they were good, tender and very clean. I did a little research on the pig's digestive system. It seems like the Aunt Bessie's brand may only use the caecum section of the hog's large intestine that has a blind end, where material can not pass through. Also, that would help explain why all the chitterlings are the same size and length.

imd1uc2 which explains why their chitterlings are not as filthy. Thanks to you, I decided to do some additional research on the caecum. From my research, the caecum, is where the food travels slowly to the lower part of the colon of a pig. Which is were the remaining nutrients and water are absorbed into the body. The colon is were the feces are formed and later expelled through the anus. Like you said, they only use the caecum.

The part of the intestine used by Aunt Bessie is the Caecum, which is the "Cul De Sac" of the upper intestine. It is the lowest, largest, bag-like potion of the upper intestine instead of the midgut intestine we are familiar with in the red bucket. The Caecum is preferred, in my opinion.

VPoetry yes I've had others to share that same information with me. I just still Do Not understand. From a business perspective ....... how they can afford to just sell (use) the Secum (cul de sac). How many hogs would it take just to make up a 10 gallon package using only the secum? What happens to the rest of the chitterlings? It's still a business that I would like to know a whole lot more about. Thanks for you input VP and many blessings.

I've come to the conclusion that removing the membrane is a matter of choice! My Mother taught us to pick the chitterlings, not dismember them by removing the membranes. My Mother's chitterlings were always plump and delicious! I've never had Aunt Bessie's, but I'm looking forward to finding and trying them. Thank you for your video.

I love aunt Bessie's but I'm going to be honest, I think that's a sack close to the intestines but not the intestine itself. That's fine because it still tastes similar but they really are expensive. For those that don't like the strenuous cleaning these are good BUT you do have to still remove some of those linings especially if it's too chewy. Everyone doesn't remove the lining though.

Always buy pre-cleaned chitterlings because you wont have much cleaning to do. Whatever you do, don't buy that Smithfield red bucket.

It appears that they use only the blind end of the intestines (called the "Caesum") and not the rest. Actually that is the meatiest part. Cheaper brands use mostly the cut up scraps.

Finally met someone who know theirs chitterlings. AB uses this part of the meaty intestine other than the cheap scraps of the "red" bucket". This is why they are more pricey. They need to be thoroughly cleaned and the film removed. But some people like to leave this on. I do not argue the issue but clean and wash them completely several times.

Remember it is the "Caecum" a biological part of the intestine...not the end. Similar to our appendix in humans but larger. Not man made. Company (AB) only uses this portion it appears. Enjoy!

Thank you for the info Ms. Barrett! I'm about to embark on my very 1st cleaning/cooking of chitlin's adventure with my Momz next month. I only recently learned of Aunt Bessie's brand, and was remarkably able to find them locally within a matter of days! I got 2 5 lb. bags in the freezer. Mom hadn't heard of this brand before, so she was also intrigued. I've been watching several chitlin videos over the past week. The closed end sock/man made reference to (AB) was starting to concern me. Again, thank you so much for the clarification. Knowledge is indeed power!

2018! 25 year old Black male living in New Haven, CT here, great video. My local Stop and Shop sells these chitlins, I picked up 3 bags the other day and cooked them reminiscent to how you have them in this video. Thanks for the tips.

These chittlins are called CECUM, it's between the small and large intestine, no need to remove the lining, product of Denmark. Just check it out, that sock is called the CECUM.

Aunt Bessie is a good chitterlings, I never got a bag like that. I couldn't find any this year until January 2022. The brand I found was uncle Lou's and the weren't overly dirty, but still needed cleaning. The red bucket is just full of crap. You don't get much from the red bucket after cleaning. Thanks for sharing.

The are probably not taking the stomaching lining out,because after 3 hrs they should be tender.That is why they are chewey,because of the lining.Check it out!!!

Hey Audrey, you really need to check out the Aunt Bessie brand to know what I'm talking about. Michelle here in the comments makes a good point. I've never had anyone who has actually tried the Aunt Bessie brand, tell me that they take the membrane off. If you try them come back and let me know what you think. I just paused your video called my local meat market and they told me that a bag of the Bessie’s chitterlings are 18.99 lol. I’m going to look around and search but if I can’t find any I’m going to go ahead and purchase but geez. I’m determined though to prepare them for my family for the first time. My aunts usually prepare them every thanksgiving faithfully from since I can remember. I plan on preparing mine by mixing them hog maws, thank you so much for your encouraging videos.

The caecum is indeed shaped this way. This is the only part of the intestine that Aunt Bessie's utilize. Also, removing the membrane can most certainly guarantee a shorter cooking time and tenderness without ever having the chewiness.

When I tried Uncle Lou's 3 yrs ago they were filty, dirty things. I would have done better buying the ones in the bucket. Everyone I know that have bought them say the same thing. They must have heard the complaints. They are cheaper but I'm afraid to try them again

I only use the red bucket chitterlings. I clean them myself. A 10lb bucket may yield 7-8 pounds of edible meat. EVEN if the package says "Pre-Cleaned"....Clean/remove the membrane/lining yourself!! Enjoy!!

Montgomery Alabama 14.99 just bought 2 bags today.Still took me 1.5 hours to clean..I remove the lining though.First time trying them in the crockpot but I will be tomorrow 😂 Every eye on my stove gonna be burning!! Lol Happy Holidays!!

I buy Aunt Bessie's all the time. I used to pay about $10.99, now I spend $15.99 for a 5lb. bag. Very pricey! I always remove the membrane and have found they are the very best! Super, super clean!

Why do u remove the lining? These is no need. As a senior, we're taught the reason for the lining removal is bc so much trash and garbage in them/on them, the lining is pulled out inadvertantly. And when u remove the lining u remove most of the flavor.

I look like the Caecum. This part of the intestine is closed in and does not digest as the main part of the intestine. It does not use peristaltic wave to move the food through the intestine. This part absorbs fluids and salts that remain after completion of intestinal digestion. I hope this helps.

Hi Meso! I know that this comment is late but I just had to tell you about these chitlins! Girl! Where have they been all my life! I totally agree with you that they are the best you can buy! These were the cleanest chitlins you can buy! A bit pricey but we'll worth it! As for the closed end , I don't know how they do it, and I don't care! Also I didn't pull the membrane off. I just rinsed them. Actually my aunt cooked some for Thanksgiving and I commented on how good they were. She then went on to tell me about how clean they were. She couldn't remember the name of them but she told me where to go and get them. I went to the store and low and behold, Aunt Bessie's! I bought them for 12.99 a bag but like I said well worth it! Also baked two velvet cakes using your recipe and one is already half gone!:) Thanks so much for sharing! I wish you all the happiness and blessings your heart and hands can hold this Holiday Season!

hey i everyone i have tried these chitterlings and they are the best on the market. these are the only chitterlings that i would keep the membrane on. i have tried aunt bessies with the membrane off and they did not taste the same. so i will be cleaning mine this thanksgiving with the membrane on. like i said this is the only brand i will try this technique on. on other brands everything is coming off. #chitterling expert lol

No boiling the first to get all the grease off of them I boil mine at least three times before cooking to release all the grease off of them then i cook them. Always remove the membrane on the back.

On bessie's children's are earth buying I watched a lady's video and she Cooked hers 8 hours on low in her Crop pot They seemed really tender when she cut them with only 2 cups of water for One bag .

I have never used that brand but I would like to try then for myself. I remove the membrane from mine and I am sure that I would still have to do that with that brand. I am intrigued at the cleanliness right out of the bag however. I have a different way of cooking mine. I have a couple of videos on chitterlings. I am interested in what you think. Daddy Cooks Hey Phil, I do remove the membrane on the red bucket and other brands. I did on these too the first time I cooked them and maybe should still do it. I may be getting too comfortable with these. lol I too am baffled because having been present at hog killings and cleaning them for years I know how they come straight out of the hog. I can't figure out how these are processed/cleaned. Why are they so symmetrical and closed on one end? I've had visitors while cooking and they didn't even know I was cooking chitterlings. I hope you do try these I can't wait to hear your take on this brand.

Chitterlings lose their flavor when the linings are removed, pretty much. Some of us ole schoolers call that process "skinning" the chitlins. They taste better to me with the lining. Enjoy them the way u like though.

Daddy Cooks , hi Phil. I use your video on chitterlings & Chriscooks4u2 for my first time cooking this. I prepared them like Chris does, but used no water after adding a package of Lipton's Onion soup mix. When you buy Aunt Bessies, turn the chitterlings and start to remove the lining. I am older than dirt & cleaned 15 pounds in less than 15 minutes. Washed 3 times and put them in pot NO WATER ON MEDIUM LOW heat. Had never eaten or cooked chitterlings before. Really sensitive about smells. GOTTA REMOVE THE LINING when turned inside out it comes off with breaking. No water!!!!

In Google search engine type, "Aunt Bessie's chitterlings originate from" and you will see that they are a product of Denmark. There are a lot of answered questions there as well. in 2019 after an extensive search, I found them at Farm Fresh Grocers in Richmond VA and made the 8 hrs round trip to buy them for 15.18 for a 5 lb bag. They look terrific. My last chitterlings in that pink bag were 8.00 and there was little left when I finished cleaning them. I was so disappointed. It looked like there were lots of scraps in the chitterlings, tiny scraps. No, Walmart did not have Aunt Bessie's, neither did Kroger, Sam's, or Food Lion. Couldn't even get them online anywhere. I just started calling around.

From my experience, those pre cleaned chitlins are usually bleached with some kind of solution. Notice how white they are? I don't care for that. My Uncle does like the Aunt Bessie's tbough. But if I cook them for Thanksgiving, I'll probably stick to my three 10 pound buckets of IPB's, or Patrick Cudahay. It takes me 3 hours to clean 1 red bucket. 3 buckets = 9 hours if cleaning.

I do believe they probably sell one portion of the intestine, and probably sell off the other portions to other chitterling sellers or for use in products like bologna, hot dogs, those pressed Mac Rib type things. Like the humans have an appendix that is closed off, like a finger that juts out of our intestine, so do pigs have these types of closed off terminus in their intestine. It is called the cecum.It is the intra peritoneal sac that forms at the junction of the small and large intestine. It is for the aided digestion of grasses and organic materials. Where in humans this appendix is a useless leftover from our cave man days. Having said that, it is a reliable and probably easily cleanable section of the intestine that that company probably sells in a very limited market. "Normal" Chitterlins are just the portions of the small and sometimes large intestine. This company stumbled upon a useful way to sell people what is not necessarily the best part, but they can sell it for top dollar. While the pig very well might have been fed GMOs, this section is a naturally occurring segment within the intestinal tract.

That is the natural intestine in the hog. The intestines are very pliable. The exit, just like your exit closes when not expelling waste. The membrane removal is your personal preference. The chitterlings are cleaned with a pressure hose. Google it.

Aunt Bessie's uses Danish hogs and take their chits from the large intestines which don't have as much waste as the small intestines like Uncle Lou's

How small is your world that you think you possess the one and only true way to prepare chitterlings or any food for that matter. All of this has been asked and answered here in the comments, as this is a very old video. I'm not going to re-hash all of this again to entertain you. My grand ma ma, always added a cup of salt, a jar of mayo, 6 oz of hot sauce, a sprig of dill, and a dash of bourbon once she got them to temp. They were tangy but went great with collard greens, corn bread and peanut butter!

Well, it sounds like cornbread and peanut butter would be the perfect accompaniment to such a dish. Never have tried chitterlings before and would not ever because of how they look and smell but these right here look sooooooooo freakin good that I think I would have to try them one time. I heard the texture is bad so I really would not ever try any could not pay me to but your recipe did it for me for some reason that I think I will make some just to taste lol THANK YOU THANK YOU!!

+Othasha Thomas Hi Othasha some people expect them to taste like fat meat but they don't. They taste like meat not mushy like fat. So if they get mushy they are over cooked. They should not be rubbery but should have a very little chew to them if that makes any sense. Only this brand will be so easy to clean. If you get any of the other brands (even other so called pre-cleaned ones) you will be overwhelmed with the cleaning process unless someone you know (that knows how) can walk you through the process. I have not been able to locate Aunt Bettie’s Chitterlings for 6 months Walmart always seams to be out of them and want answer their phone !!!

I agree not a lot of work . I brought me two five lbs bag . I live in New Jersey and yes they were prices all together two bags and my hog maws I spent 47.58. one bag is 20.00 dollars . But I love them. Making my for Christmas dinner

Hi dear !! Great video. I have cooked for many years and aunt Bessie's are the cleanest chitlings.. But i still soak them and when i cut i go through each one under running water the middle and edges. I do not want one speck on a chittling Lol😍 and i didn't find a anything...cost 13.79 at walmart .... Enjoyed 😃👍👊

I clean and cook Aunt Bessie chitterlings and the be good and tender always. I noticed that you didn’t remove the membrane that’s why they were chewie l was taught to take the membrane off.

Hey Mona, I have never heard of the Stephens as I can remember. I don't think we have those here in Georgia but no matter I know about those aweful nasty ones, Wilson and Hormel are 2 of our nasty ones. Sounds like you got that menu already laid out. I think that there is a part of the intestine that ends in a "looped" shape. If you think about how some plumbing works..There is a closed piece that sometimes connected along with the other pieces that are continuous. To be more exact, these Chitlins come from the appendix area of the pig\hog..and are "naturally" closed and shaped like that. :)

+Edwin Stewart If you search Google for "appendix" or pig\hog appendix you will see that same shape of the "pocketed" chitlins you are cleaning. The small part of the intestine is cut away, and the "thin" part, which is actually the appendix. They are cut short like that because that's just below where the "small intestine" connects. Hope this clears things up. :)

+Meso Making It A quick Google search on intestines alone, reveals that there are different parts to it..It's not just one continuous internal section of the digestive system. There are charts on Google images that point to each of these parts. The part that the folks at Aunt Bessie's manufacture (or dissect) from the pig\hog, is the part that is closed at the end..right before where the appendix is. The appendix is just a tip..Looks like a tail..of the intestine. :)

I would never buy any brand other then Betsy they are clean I remove the membrane my mom leaves hers on either way is fine without just cook faster and a little thinner. Membrane is not waste it can be ate the same a pig lining on a sausage every one do them different but I must say aunt Betsy it the best and cleanest no grit hey corn hair just pure clean i recently spent 60$ on queen ella they was thin very dirty bleached and very little left after cleaning sometimes you have to spend the extra money and choose quality or quantity

So what was your verdict Meso? I'm straddling the fence and want to experiment with both methods. I have not cooked or cleaned any yet. My Momz gave me a full tutorial on cleaning them last summer. She instructed me on how to remove the membrane. I tend to be in agreement with many that it is strictly a matter of preference, but I have 0 experience with it, so it's not for me to say.

I've been buying Aunt Bessie's for a few years and they are pretty clean, but I do remove the membrane. I have some cooking on the stove right now but for some reason, this year, they don't seem to have a lot of taste.

Hey Glinda, I used to have chitterlings more when I was younger. I really don't eat them often at this point in my life. But I do find Aunt Bessie's to be inconsistent as a dish. Sometimes they don't have much of a good pork chitterling flavor and sometimes they can be tough. Thanks for commenting hun and many blessings.

I luv Aunt Bessie's brand triple cleaned pork Chitterlings (chitlins). This is my third year purchasing them. I believe and wonder also if the chitlins used by the Aunt Bessies brand are the cecum end of the intestines. If that's the case, each hog has only one cecum (like us), thereby needing more hogs to provide a 5lb bag and so dearly priced or, maybe cloning the parts they need only. I can't help but wonder ppl, but i just luv them. Wish u can find out. There are always 10 to 11 pieces in a bag and the cleanest chitlins I've EVER seen, as I was raised on the farm and have been cleaning and eating chitlins for nearly 75 years.

One thing my mother did (and I still do also) is after the chitterlings were done, she took them out of the liquid, let them drain. She heated some Bacon Fat (liquid gold, y'all) and sauteed the chitterlings with onion for about 10 minutes. Then she put them back in to the pot. Anyone else ever seen that? I remember my mom and grandmom cleaning chitterlings that had just come from a butchered hog. The smell is amazing - amazingly BAD! This was back in the 1950s.

I don't know anything about chitterlings. But if they are like socks, could you stuff them? If you have to cook them a long time, what would you stuff in them that wouldn't disintegrate? Thanks.

Hey there Janet, how are you, darling? Yes, yes you can stuff them but chitterling by-laws say that they can only be stuffed at Christmas time and then only with kidney stones from the same hog that the chitterlings come from. Since you admit you know nothing about chitterlings I would advise you not to try this at home but rather there in the asylum under medical supervision. these are Frankenstein GMO chitterlings folks! !! i bought aunt Bessie not knowing from a Frankenstein hog GMO AND CLONED whatever! !! i grew up cleaning chitterlings and there is absolutely no damn way these are natural!! thats why they are chewy!! you are suppose to take the membranes off PERIOD! ! now, i have to go BACK to the store to actually buy REAL CHITTERLINGS! ! come on folks...use common sense. .. these are NOT CHITTERLINGS! !! WAKE UP!! THESE ARE SCARY. DO NOT EAT THESE! ! ill rather lose a few bucks than to jeapodize my heath and end up sitting in the doctor's office. i hope this message helps a few with a good mind.

Welp. I always buy the red bucket and just suck it up and clean them because I wasn't aware on the precleaned as my aunt says "precleaned are rubbish" lol. BUT during the cleaning process I watched your video and told myself I'd make aunt bessies next time. months later I finally find some this morning went through and was amazed at how clean they were. Lol. I was soo amazed that I rushed through them and got them situated into my crockpot... about 2 hours into slow cooking them I had realized that I hadn't pulled off the membrane as I usually do! but Google was my best friend today and after hours of research in pretty confident that I'll live without removing them this time and if they're good this way then I probably won't anymore. As for the comments on what's safe etc etc I immediately think of OUR ancestors that were slaves that just didn't have it as good as we do with the necessary tools to thoroughly clean and cook chitterlings so I'm SURE we will survive a little tussle. Lol. Calm down people and LET'S EAT! Btw... my pot will be done at 2 am. it is now 12am. and my stomach is touching my back. Lol.

These chitterlings take at least an hour longer to cook versus other regular ones that you clean. They were probably cleaned in lye which explains why they are so light colored I have used them for 10 years now and they look exactly like these in the video, no fat no 💩.

There is a thin layer of skin that you are supposed to peel off of them...they won't be chewy and they will be really clean

I don't eat chitterlings, but I have grown so tired of my friend here in San Diego where I now live (originally from SC) fuss at me for not eating them. So I am looking for a great recipe just to try them out. I must commend you on how well you explained everything thoroughly, and the quality of your voice and video actually made me miss home! I also enjoyed your anatomy lesson. I certainly can appreciate that as I am a physician. I look forward to trying your recipe. I am going to do a little research and see if I can find any information pertaining to how they are manufactured and let you know!

So I made my very first pot today! I couldn't find Aunt Bessie's brand, but I bought Uncle Lou's "precleaned" chitterlings.. First, they are not precleaned! It took me a while to clean them, but I do believe you would've been proud! Thanks to your video, I am very confident that the are as clean as they could be. They are still cooking. I decided to cook them in the crockpot, so we'll see what they are all about tomorrow! Happy New Year!

I was reluctant in buying Aunt Bessie before I learned more about them. Thanks for the info. I noticed on the package it says they are a product of Denmark. Now I have heard that other animals could be used as chitterlings, that is the sack or bowel. Most of the cleaning for the pig u will see what is contained down to the grass. The smell, yuck, but you can be sure they are from the pig. As for the quality in saying some are tuff leads me to believe that they from another animal other than the pig. Also, the same size, another clue, unless they are massed produced at the same time and age and size of the pig so that they are all uniform, but being a skeptic, i doubt it very seriously. I will stick with Uncle Lou. Also what about the lining?

Meso I went to a chitterling supper one time. I tried the fried ones but it wasn't for me. My cousins wife begged me to try one and he warned me against..LOL. It was funny, I'll never forget it.

I love them too,I find that if you put a little bit of oil in when u cook them, they will turn out tender.my frist time they where tough but the next time I put the little bit of oil in with them. They turned out tender and delicious

+Julia Sexton Hello Julia, I wash certain meats with an acid (i.e. vinegar, lemon or lime). I wash my chicken and pork using those acids sometimes, not always. I can't really say when I do it, it depends on what the meat looks like and how fresh it is. I feel that it gets rid of surface bacteria and also brightens up the flavor a bit. But it is absolutely preference, not a necessary step. Thanks for watching and commenting. Be blessed, Julia.

The chitterlinshave a lining you have to take off every one even the already cleaned chitterlin that really do s not exist that is why it is Cheney

+gloria ward Hey Gloria, how are you? I always said the same thing, "there is no such thing as an already clean chitterling" but that's before trying Aunt Bessie's. I can tell you have not tried them yet. There is absolutely no trash or dirt on them. Now of course you are still going to re-clean them just because that's what we do. Depending on who you talk to or where you are in the world, chitterlings can be eaten with lining removed or left on. That will not result in the kind of chewiness I'm talking about. This chewiness cannot be cooked away even after 12/14 hours of cooking. Read some of the other comments from people who know the brand. I hope you do try them and then let me know what you think. Yes, Brenda, big price didn't peel. The only chitterlings that I would ever do this with. However it is preference and choice. If you ever buy them you will see exactly what I (and others on this thread) are saying. Thanks and be blessed.

Hey there Troy Ann, what a nice compliment and I do mean compliment to be in the company of so many other great cooks because KZbin really has some great ones. They do sell them in other stores and you'll start seeing them in more places now that it's holiday time. They do have a website, go in and put in where you live and it will tell you nearest to you. +Willett Reed Hey Willett, no I didn't forget to remove the membrane. I always remove it with the other brands and I removed it with this brand the first time but maybe I've gotten too comfortable with these. lol I only cook chitterlings about once every few years and this brand has baffled me. +Mrs. Harris Hey Mrs Harris, welcome and how are you? I'm so glad to talk with someone who has actually prepared this brand of chitterlings. Then you can attest to the fact that there is NO straw, feed, feces, grit, dirt, or debris to be seen on this brand and that when you cook them there is little to no smell in your house. Now with that being said I am going to still wash and try to find something to pick off them just the same. The red bucket, bags, and all the others that say pre-cleaned are horrible in terms of being unclean. Those, I do remove the membranes usually just because I don't want to take the time to pick through them. They are too nasty to sit there for hours and pick. The first few times, I did remove the membrane with Aunt Bessie's but this last time I did not and if I make any for the holidays (depends on whether I have request or not) I probably will not again, but do have to cook longer with the membrane on. I am uncomfortable when you say "the lining MUST be removed!" That is just not true. I've heard this debate for years and decided to do some research. It is a preference. Southern blacks are not the only ones that eat chitterlings. And many, many Americans do not remove the membrane. In fact if you eat sausages many of them are encased in pork chitterling membranes. Chitterlings are eaten in many other countries by many cultures who prepare them with and sometimes without the membrane attached. Most of them feel that removing the membrane is wasting part of the food itself. So fat is cut off and feces, dirt, straw, debris etc. are meticulously removed by blade or by hand. Chitterlings are eaten in Mexican cuisine and in the UK, Africa, Turkey, Greece, Spain, France, Latin America, the Caribbean and Asia just to name a few. The chitterlings eaten elsewhere are not always pork of course, some are lamb, beef, and even chicken, some are ground to make a type of braided sausage and grilled which is considered to be a delicacy in places like France. Basically for anyone that eats intestines (which hopefully are very well cleaned sacks, that once held feces) to be squeamish about the membrane is like eating sushi but squeamish about rare steak. People actually eat poop everyday in oysters, shrimp, lobster etc .... and think nothing of it and worse, snails, eels, insects, rodents, etc. We all do our very best to serve to our families what we believe to be clean and healthy. Anyone not comfortable with leaving the membrane on, please do remove it. But, again I say to each his own especially when it comes to chitterlings because just as many people prepare chitterlings with the membrane on as without. It is all perception and mindset. Quite enlightening! But as you have said to each it's own preference and I will continue to remove the lining. I sure can attest to this brand being the cleanest chitterlings and having minimum smell. My mom cleaned chitterlings in that devil red bucket for years lol It would take her hours upon hours to get them cleaned. The end result would always be more fat and trash than the chitterlings. Now she only cooks Aunt Bessie's. Less chitterlings for more money, but it SURE it worth it! I love your channel! Have a wonderful day.
