Brownie Cake
Ingredients
• Unsalted butter 1/4 cup (or 46 grams) at room temperature
• Oil 1/4 cup (or 46 grams)
• Cooking chocolate (160 grams), chopped
• Instant coffee 1 tsp (optional)
• Eggs 2 large, at room temperature
• Brown sugar 3/4 cup
• Vanilla 1 tsp
• Plain flour 3/4 cup (95 grams)
• Cocoa powder 4 tbsp
• Salt 1/2 tsp
• Baking powder 1 tsp
Preparation
1. In a pan, add butter, oil, cooking chocolate and instant coffee. Melt on slowest flame or water bath until chocolate is just melted. Allow to cool to room temperature.
2. In a bowl add brown sugar, eggs and vanilla essence. Whisk using a hand whisk until frothy on top.
3. Add plain flour, cocoa powder, salt and baking powder. Stir gently until just combined. Do not over mix.
4. Add melted chocolate and butter mixture and stir in gently until just combined.
5. Pour in an 8x8 inch pan lined with parchment paper.
6. Bake in pateela or in a preheated oven at 180˚C for 20-25 minutes or until toothpick inserted comes out clean.
7. Take out and allow to cool to room temperature and then take out, cut into squares and enjoy with tea or coffee!
