You have to wrap the leg in bacon before the chocolate if you do it the other way around the chocolate would burn and the bacon wouldn't cook.

Gina Nguyen you cook the turkey leg, while also cooking chocolate. Then you cut bacon that was cooked previously, into pieces and put it on the freshly dipped chocolate covered Turkey leg while the chocolate is still in a liquid form. Then you let the pieces of bacon harden into the chocolate while the chocolate hardens. BOOM
