Chocolate Caviar!

This fully edible box of Caviar is made for chocolate lovers!
It's composed of a chocolate crunchy base, a rich chocolate ganache, a moist chocolate joconde sponge soaked with a chocolate syrup, a light chocolate mousse, a soft chocolate cremeux and is topped with hundreds of chocolate pearls. it's served with a side of mini pancakes and both the box and the spoon are crafted out of chocolate!
The making of the Caviar is one of me most intriguing techniques I've done so far!

Amazing work as usual, but I do miss the longer videos when we got to see more of the process, rather than hit something on the table and, Presto! It's a different color! Or it's multiplied into several, or many parts have been assembled. It's gotten to where it looks more like a magic show than the actual process of creating something from chocolate.
