The Hillbilly Kitchen - Down Home Country Cooking

This fudge icing recipe tastes much better than Ganache. Use it to "coat" your cakes. It gives you a soft chocolate fudge topping for your cakes. It tastes exactly like chocolate fudge because it is chocolate fudge.
This icing is not spreadable, you must pour it on your cake while it's still warm. You cannot whip it into a frosting. It is a coating.
Ingredients:
2 cups - Sugar
3 - Heaping tablespoons of cocoa
2/3 cup - Whole milk
1/2 cup - Real butter
1 1/2 teaspoons - Real vanilla

This is exactly what my Arkansas grandma made for cakes! I never had the recipe from her - she passed when I was a little kid in the late 1960s, but now I've got your recipe! Can't wait to try it out for Christmas.

We grew up with granny and mama making this kind of chocolate icing! (We didn’t know anything about store bought icing in a can!). I am sooo glad I finally found the “real” recipe and instructions. Can’t wait to share with my sister! Thank you for your videos and for always sharing the love of Christ, our Lord and Savior!

I love yall"s channel! I wanted to tell you how thankful I am to have found it. This recipe for your chocolate fudge icing has also been in my family for years. We lost my grandmother in 1996 and her mom years before that. She always made a homemade chocolate cake with this icing. when she passed so did her recipe. for years we had no idea how she made her icing then one day I was searching for a chocolate icing and there it was. I about fell over when seeing your video. Thank you so much from the bottom of my heart. Not only have I found the icing recipe we always used from yall but a few others. Thank you so much. Yall are my go-to now for great homemade recipes.

I’m so excited! Made my daughter a yellow “poke” cake with ur icing poured over it, topped with cool whip, and ur recipe chocolate covered strawberries on top! I tasted the icing as I made it and it tastes AMAZING and the shine on the strawberries is so pretty! I haven’t put it all together yet, letting strawberries cool before putting them on top of cake… her birthday is tomorrow.

Hershey's is the best! They have a great chocolate cake recipe on that can, too. But just remember, & your mom will remember this, Hershey's was always better in the metal tin box. Thank you for taking time & effort to video this. Was fun to watch & learn.

I'm like you baby girl, I think that Ganache is a little over rated myself. I only use ganache for making truffles. I love this recipe, I have made it before but really forgot all about it, until you.....today!!!! I love the little cakes you made to put this amazing frosting on all over.

This looks delicious, I love ganache also lol! I’m not a fan of Hershey’s cocoa since it’s bitter and acidic cocoa. I like using dutch-processed like Guittard Cocoa Rouge cocoa since it’s mellower and richer flavor than the old-fashioned natural cocoa like Hershey’s or Nestlé Tollhouse. I gotta try this icing with a homemade chocolate bundt cake or some homemade chewy cocoa brownies! Happy Baking! God Bless! ❤️

I made this along time ago on my own bc I didn't have icing. I thought I made a mistake. Lol bc it made the cake texture feel spongy . but boy was it Good !!!

What you have in Tennessee mountain terms is as close to chocolate gravy as you can get. We put this over hot biscuits or use it to make our 10 layer cakes.

Vote up for chocolate on biscuits! Tried to tell my kids about this and they looked at me as if I told them to put spiders in their hair. Slap a pat of butter inside a hot biscuit, cover it with chocolate and you have one fantastic, dreamy delicious, super-easy chocolate pastry!

I'm so glad I found you Samantha! I've been looking for this recipe for so long. But I do remember my mom using dark corn syrup to replace some of the sugar. Have you ever tried it that way? I'd be curious if you tried it, how much less sugar you would use and of course how much corn syrup would be added. If you try it first please let me know. If I do, I'll let you know. Lol. But you're right, this is the absolute best chocolate frosting. ❤️ God bless from one country girl to another!

Bee-yoo-tee-full! This is one of our favorites as well. I figured out how to adapt it as icing, dessert topping etc, after making no bakes a few hundred times! I have always put the butter in at the start, with the sugar, let that melt together a minute, then add in the milk and keep going. Now I'm interested to see what differences there may be in adding it later on. I'm thinking it likely helps preserve more of the butter's integrity/flavor and might shift the texture a bit too...ok, ok...any old excuse to make some will do, right?! Also, we sure do look forward to hearing a bit from God's Word while you're cooking~nothing like feeding the body and the soul at the same time~well done Samantha!

My mom is now in her 80's,and she always made this to ice yellow cake for my dad. Sometimes it'd be kinda chewy and sometimes hard..

It is easy. The only tip I would give is remember it is not spreadable. My mom made it for a layer cake and tried to spread it. My dad's favorite cake is yellow with fudge frosting, so she decided to try this recipe and she said her brain must have shut down. She waited for it to cool so she could spread it :) I guess it started working again and she warmed it back up and poured it over the cake. It was delicious, so even if you brain temporally goes to sleep it still comes out :)) We all have those days. Let me know how yours comes out. Thank you. God Bless You and Your Family!!!

Talking with hands.cracks me up...I had a beautician that did my hair and it took for ever because she had to talk with her hands as well..I would always say, "Cassy put your hands back on my head...hahaha. Hi Samantha. Hope you doing fine. Please reply back if you read my comment. I tried your recipe today with half the quantity mentioned by you (As I was trying for first time). Once the mixture cooled it became gritty and obviously it cannot be used for coating cake and i have to used my ganache instead. 1 cups - Sugar (200 gm) 2 - Heaping tablespoons of cocoa 1/3 cup - Whole milk 1/4 cup - Real butter little less than 1 teaspoons - Real vanilla. Please let me help in troubleshoot the issue with it.

How long do you cool icing before pouring over cake.

Just a few minutes. If you let it sit too long you won't be able to pour it. You do need to give it a few minutes because it will all run off the cake if it is too hot. I usually stir it until it starts to thicken just a little then I know it is ready to pour over the cake.

Just in case you’d like to know❤ Seriously, when measuring ingredients in dry measuring cups, dry ingredients are to be over the top and leveled off. And of course liquid ingredients “to the top.” There is more about why it is helpful to measure liquids in a liquid measuring cup, but I use dry more often today too😂😂😂

I tried to cut back on the sugar and it didn't thicken up right but that wasn't using this recipe Best icing over a yellow poke cake

Great for Valentine's Day dipping strawberries. The commercial ones are horribly expensive and not as fresh.

Don't know how anybody could hate ganache. It is to die for! You must be using an inferior quality of chocolate to make yours. This recipe looks interesting.
