Know I'm not him, but I'd definitely recommend this guitar, mostly anything by Fender is built compositionally well, and if you're looking for a vintage jangle tone, that's a great choice

how do you make these covers with more than one video?

magic... no just kidding the way I would do it would to do each of the covers separately (optionally whilst listening to the song on headphones to help with timing.) then with a video editor line up the two covers as well as a digital copy of the original song added on top. so it sounds nice and clean. I am not sure exactly how he did it but I could only imagine it being an extremely similar process.
