I like how he says I don't know to pretty much every question. We need way more of that in public discourse. There's so many public figures making crazy claims that they definitely don't know but assert it so confidently

The guest had a mis-statement. Hilbert was 19th century (start of). He was influential at the start of the 20th century (which was early 1900s). A number of mathematicians were trying to get rid of paradoxes by formalizing logic including Hilbert but also Bertrand Russell and Alfred North Whitehead. Godel proved the incompleteness theorem . He said a sufficiently powerful set of axioms would lead to contradictory statements that could not be proven true or false (e.g., This statement is false). That is, some mathematical statements can never be proven or disproven.
